Description

These satay skewers are a real eye-catcher at any party! I really like making them because they are so easy to prepare and always go down well. The tender pork and chicken are refined with a light chili-lime marinade and then fried until crispy. There are two delicious dips to go with it: a creamy peanut sauce with a hint of spice and a fruity-spicy apricot ketchup dip. The skewers are perfect as finger food or as a main course with a side dish such as rice or prawn crackers. An absolute must for all lovers of Asian cuisine!

Ingredients (18 ingredients)

  • 400 g Pork escalope
  • 300 g Chicken fillet
  • 1 piece Red chili pepper
  • 3 tbsp Lime juice
  • 1 clove Clove of garlic
  • 5 tbsp Oil
  • 2 tbsp Creamy peanut butter
  • to taste Cayenne pepper
  • Tabasco
  • 2 tbsp Soy sauce
  • 0.5 tsp Sugar
  • 0.5 can Apricots
  • 3 tbsp Tomato ketchup
  • 1.5 tsp Sambal Oelek
  • to taste Salt
  • 1 tbsp Sesame (light and dark)
  • Lime slices for garnish
  • 12 piece Wooden skewers

Preparation (7 steps)

Prepare meat

Pat pork escalope and chicken fillet dry. Cut the escalope into small cubes and place closely together on six wooden skewers. Cut the chicken fillet into strips lengthwise and place wave-like on six wooden skewers.

Prepare chili-lime marinade

Cut the chili pepper lengthwise, deseed, wash and cut into strips. Place chili strips and the prepared skewers in a bowl. Drizzle 3 tablespoons of lime juice over it and let it steep for about 15 minutes.

Chop garlic

Thermomix® Setting

Peel 1 clove of garlic and place in the mixing bowl. Chop for 3 sec./level 7.

Prepare peanut sauce

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 1 tablespoon of oil to the mixing bowl and sauté together with the chopped garlic for 3 min./120°C/level 1. Add 2 tablespoons of peanut butter, cayenne pepper, a few dashes of Tabasco, 2-3 tablespoons of soy sauce and ½ teaspoon of sugar. Pour in 200 ml of water while stirring and heat for 5 min./90°C/level 2.

Prepare apricot ketchup dip

Thermomix® Setting
5 sec/Speed 3

Drain ½ can of apricots (425 ml) and place in the mixing bowl. Puree for 10 sec./level 8. Add 3-4 tablespoons of tomato ketchup, 1-2 teaspoons of Sambal Oelek and a little salt and stir for 5 sec./level 3.

Fry skewers

Heat 4 tablespoons of oil in a large pan. Fry skewers in it for about 1 minute on each side. Season with salt and sprinkle with sesame seeds (1 tablespoon, light and dark). Briefly fry lime slices in the frying fat.

Arrange

Arrange skewers with the sauces and lime slices. Prawn crackers taste good with it.
