Description

This broccoli rice is a great low-carb alternative to traditional rice and tastes incredibly fresh and delicious! I especially like to make it in the autumn when there are fresh pomegranates from the market. The slightly acidic fruit vinegar and the creamy yogurt with lemon zest harmonize perfectly with the crunchy broccoli and the roasted cashews. The dish is quick to prepare and is ideal as a light lunch or as a side dish for grilling. If you like, you can crumble some feta cheese over it - simply delicious!

Ingredients (7 ingredients)

  • 800 g Broccoli
  • 50 g Salt
  • 1 piece red Onion
  • 1 piece Pomegranate
  • 4 tbsp Fruit Vinegar Pear
  • 4 tbsp Olive Oil naturally cloudy
  • 500 g Yogurt mild 3,8%

Preparation (7 steps)

Chop broccoli

Clean, wash and divide 800 g broccoli into florets. Place the broccoli florets in the mixing bowl and chop for 5 sec./level 5 until they are the size of rice grains.

Blanch broccoli

Thermomix® Setting
2 min/212°F/Speed 1 100

Place the chopped broccoli in the simmering basket. Add 1 liter of water and 50 g of salt to the mixing bowl. Insert the simmering basket and blanch for 2 min./100°C/level 1.

Drain broccoli

Remove the simmering basket and pour the broccoli through a fine sieve. Empty the water from the mixing bowl.

Chop onion

Peel, quarter and place 1 red onion in the mixing bowl. Chop for 3 sec./level 5.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add 4 tbsp fruit vinegar pear, 4 tbsp olive oil naturally cloudy, salt and pepper to the mixing bowl and stir for 10 sec./level 3.

Prepare yogurt

Thermomix® Setting
10 sec/Speed 2

Add 500 g yogurt mild 3.8%, salt and pepper to the mixing bowl. Wash the lemon, grate the peel and add the lemon zest. Mix everything for 10 sec./level 2.

Arrange

Mix the blanched broccoli with the chopped cashews, the chopped onions and the pomegranate seeds. Drizzle with the dressing and serve with the yogurt.
