Description

These brownie protein bars are a healthy and vegan snack, ideal after a workout or as a protein-rich snack. The bars are easy to prepare and consist of sweet lupins, brown lentils, raisins, oat flakes and hazelnuts. The preparation time is approx. 20 minutes plus chilling time. The recipe yields 10 servings.

Ingredients (13 ingredients)

  • 100 g Sweet lupins, cooked
  • 100 g Brown lentils, cooked
  • 150 g Soft raisins
  • 1 tsp Lemon zest, grated
  • 100 g Sunflower seed flour, de-oiled
  • 30 g Very fine oat flakes
  • 40 g Hazelnuts, ground
  • 20 g Cocoa powder, de-oiled
  • 0.5 tsp Vanilla, ground
  • 1 pinch Salt
  • Dark chocolate (at least 80%)
  • Chopped hazelnuts
  • Dried flowers

Prepare ingredients

Place 100 g sweet lupins, 100 g brown lentils, 150 g soft raisins and 1 teaspoon lemon zest in the mixing bowl.

Chop ingredients

Chop the ingredients in the mixing bowl for 15 sec/speed 8 until a fine, homogeneous mass is formed. If necessary, scrape down the sides with the spatula and repeat the process.

Add more ingredients

Add 100 g sunflower seed flour, 30 g oat flakes, 40 g hazelnuts, 20 g cocoa powder, 1/2 teaspoon vanilla and 1 pinch of salt to the mixing bowl.

Knead the dough

Thermomix® Setting

Replace the standard blade with the Patix dough blade. Knead all ingredients for 2 min/knead setting to form a dough.

Shape and chill the dough

Spread the dough evenly in a mold (15x15 cm) and press firmly. Refrigerate for 2 to 3 hours.

Cut and decorate bars

Cut the dough into bars and decorate as desired with dark chocolate (at least 80%), chopped hazelnuts and dried flowers.
