Description

This simple but incredibly tasty pasta dish is a true classic of Roman cuisine. The Bucatini alla Gricia impress with their creaminess and the intense flavor of Guanciale and Pecorino Romano. I especially like to make them when I need something quick, but still want something special on the table. The preparation is straightforward and succeeds with the Thermomix® in no time at all. Perfect for a cozy evening with friends or family! A touch of freshly ground pepper rounds off the dish. Buon appetito!

Ingredients (6 ingredients)

  • 320 g bucatini
  • 250 g guanciale
  • 60 g grated pecorino romano
  • to taste pepper
  • 10 g salt
  • 1 l water

Preparation (8 steps)

Prepare guanciale

Cut 250 g of guanciale into slices about 0.5 cm thick and then cut them into strips. Set the strips aside.

Fry guanciale

Place the guanciale strips in a pan and fry over medium heat until the fat is released and the guanciale becomes crispy. This takes about 8-10 minutes. Remove the fried guanciale from the pan and set aside. Leave the rendered fat in the pan.

Boil water

Add 1 liter of water and 10 g of salt to the mixing bowl and bring to a boil for 10 min./100°C/speed 1.

Cook pasta

Add 320 g of Bucatini to the mixing bowl and cook without the measuring cup for the time indicated on the package/100°C/speed 1. Activate the reverse rotation to avoid chopping the pasta.

Drain pasta

Drain the bucatini, collecting about 100 ml of the cooking water. Put the pasta back into the mixing bowl.

Mix pasta with guanciale and pecorino

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Add the fried guanciale and 60 g of Pecorino Romano to the bucatini in the mixing bowl. Mix for 20 sec./reverse rotation/speed 2.

Create creaminess

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Add some cooking water (approx. 50 ml) and mix for 10 sec./reverse rotation/speed 2 until a creamy sauce is formed. Add more cooking water if necessary.

Serve

Divide the pasta onto plates and serve immediately. Sprinkle with freshly ground pepper as desired.
