Description

This brioche burger with bacon and egg is a hearty treat for every day! I love how the soft brioche bun harmonizes with the crispy bacon and creamy egg. A processed cheese provides the extra portion of flavor. The preparation is super easy and quick, ideal for a relaxed breakfast or a quick brunch. If you like it spicy, you can add some hot sauce. An absolute favorite recipe that always goes down well with me!

  • 1 etwas Butter
  • 1 slice Processed cheese
  • 1 piece Brioche Burger Bun
  • 2 Streifen Bacon
  • 1 etwas Sauce Hotsauce

Whisk eggs

Whisk 2 eggs in a bowl and set aside.

Let eggs set

Thermomix® Setting
5 min/194°F/Gentle stir speed 90

Put some butter in the mixing bowl and melt for 3 min./Varoma/level 1. Add the whisked eggs and let it set for 5 min./90°C/stirring level gently without a measuring cup. Run the spatula along the bottom to prevent sticking.

Melt cheese

Thermomix® Setting
2 min/140°F/Gentle stir speed 60

Place a slice of processed cheese on the set eggs and melt for another 2 min./60°C/stirring level gently.

Fry bacon

Fry 2 strips of bacon in a separate pan over high heat until crispy. This cannot be prepared in the Thermomix.

Top the burger

Remove the eggs from the mixing bowl and serve on a brioche burger bun together with the crispy bacon and some hot sauce of your choice.

The idea came from the desire for a hearty breakfast that is quick to prepare, but still offers something special. I love to conjure up something delicious with simple ingredients, and this burger is the perfect proof of that. The secret of this burger lies in the combination of flavors and textures. The brioche bun, with its slightly sweet note and soft consistency, forms the perfect base. It wonderfully captures the flavors of bacon, egg and cheese. The bacon, fried crispy, contributes a salty and smoky component that forms a great contrast to the sweet bun. The egg, creamy and soft, connects everything and provides a juicy texture. The processed cheese, often underestimated, brings an additional creaminess and a mild, melting taste into play. And if you like, you can add a few drops of hot sauce for a pleasant spiciness that perfectly rounds off the dish. The preparation in the Thermomix® is very easy and saves time. Whisking the eggs is done quickly, and setting in the mixing bowl is perfect. It is important to push the eggs along the bottom with the spatula while they are setting to prevent them from sticking. The temperature of 90°C is ideal for achieving a creamy but not too dry result. Melting the cheese directly on the eggs in the mixing bowl is a clever trick that saves time and ensures even distribution. However, the bacon must be fried separately in the pan, as the Thermomix® cannot achieve the desired crispness here. For a vegetarian version, the bacon can simply be omitted and replaced with fried mushrooms or halloumi. If you like it vegan, you can use a vegan brioche bun, prepare tofu scramble instead of egg and use vegan cheese. There are no limits to the imagination when it comes to spices. Instead of hot sauce, fresh herbs such as chives or parsley, or a pinch of smoked paprika powder also go well. Serve the brioche burger with bacon and egg as a hearty breakfast, brunch or quick lunch. A fresh salad, crispy potato wedges or simply a glass of orange juice go well with it. Leftovers of the eggs can be stored in the refrigerator and warmed up the next day. The brioche bun can also be prepared well and toasted shortly before serving. However, the bacon should always be freshly fried to preserve its crispness.
