  • 150 ml Water
  • 500 g Wheat flour Type 550
  • 100 g Barley malt extract
  • 15 g Salt
  • 50 g Rye flour Type 1150
  • Flour (for dusting)

Prepare the yeast

Add 100 ml lukewarm water and 1 cube of yeast to the mixing bowl and mix for 2 min./37°C/speed 2.

Prepare the main dough

Add the remaining water (150 ml), 500 g wheat flour Type 550, 100 g barley malt extract, 15 g salt and 50 g rye flour Type 1150 to the mixing bowl with the yeast mixture and knead for 3 min./kneading setting.

Dough resting

Place the dough in a bowl and cover, let rise in a warm place for about 1 hour, until the volume has doubled.

Shape Bürli rolls

Place the dough on a floured work surface and divide into about 12 equal pieces. Shape each piece into a round roll and place on a baking sheet lined with baking paper.

Prepare the surface

Brush the Bürli rolls with some water and dust with some flour.

Baking

Bake the Bürli rolls in a preheated oven at 230°C top/bottom heat for about 20 minutes. After half the baking time, reduce the temperature to 200°C.
