Description

This Brussels sprout soup with shallot, garlic, potato and vegetable broth is quickly prepared in the Thermomix®. The vegetarian main course is ready in about 60 minutes and yields one serving. Ideal for light, healthy cuisine in winter and also suitable for small budgets.

Ingredients (14 ingredients)

  • 1 Stück Shallot
  • 1 Stück small Garlic clove
  • 1 Stück small Potato
  • 75 g Potato (approx.)
  • 125 g Brussels sprouts
  • 1 TL Butter
  • 10 g Butter
  • 200 ml Vegetable broth (Instant)
  • 2 EL Milk (1.5%)
  • Salt
  • Pepper
  • ground Nutmeg
  • 0.25 Scheibe Pumpernickel
  • 10 g Pumpernickel

Preparation (7 steps)

Chop shallot and garlic

Put shallot in the mixing bowl and chop for 3 sec./level 5. Add garlic and chop for 3 sec./level 7.

Add butter to the mixing bowl and sauté for 3 min./120°C/level 1.

Add potato and Brussels sprouts

Add potato cubes and Brussels sprout quarters to the mixing bowl and sauté for 2 min./120°C/level 1.

Add vegetable broth and simmer

Pour vegetable broth into the mixing bowl and simmer for 20 min./100°C/level 1.

Puree soup

30 sec/Speed 8-10

Puree soup for 30 sec./level 8-10, holding the lid tightly.

Stir in milk and season

Add milk and stir in for 1 min./90°C/level 1. Season with salt, pepper and nutmeg.

Finely crumble the pumpernickel and sprinkle over the soup.
