Description

This potato stew with leeks and carrots is a comforting and nutritious dish, perfect for cold days. The combination of potatoes, leeks and carrots creates a sweet and smooth flavor that the whole family loves. It is a simple and economical recipe, ideal to prepare in the Thermomix®. I usually add a little sweet paprika to give it an extra touch of flavor. It is prepared in a short time and is a very complete vegetarian option. Go ahead and try it, you will love it! Also, it is an excellent way to include vegetables in the daily diet.

Ingredients (8 ingredients)

  • 4 piece potatoes
  • 2 piece carrots
  • 4 piece leeks
  • 1 piece onion
  • 3 clove garlic
  • 1 tbsp salt
  • 8 tbsp oil
  • water

Preparation (6 steps)

Chop onion and garlic

Introduce the onion in the glass and chop 3 sec./level 5. Add the garlic cloves and chop 3 sec./level 7. Lower the remains of the walls of the glass with the spatula.

Sauté onion and garlic

Add 6 tablespoons of oil to the glass and sauté 3 Min./120°C/level 1.

Add potatoes and carrots

Thermomix® Setting
2 min/Speed 1/Linkslauf Reverse

Peel and chop the potatoes and carrots into medium cubes. Add the potatoes and carrots to the glass and stir 2 Min./level 1/Reverse.

Add water and cook

Thermomix® Setting
30 min/212°F/Speed 1 100

Add water to cover the potatoes and carrots (approximately 800 ml). Add the salt. Program 30 Min./100°C/level 1.

Add leeks

Thermomix® Setting
10 min/212°F/Speed 1 100

Meanwhile, clean and chop the leeks into 1/2 cm thick slices. Once the 30 minutes have passed, add the leeks to the glass and program 10 Min./100°C/level 1.

Serve hot with a drizzle of raw oil (1 tablespoon per person).
