Description

This recipe for tender cod with mushrooms and roasted peppers is a delicious and healthy main course prepared in the Thermomix®. The combination of tender fish, aromatic mushrooms and sweet peppers makes this dish a taste experience. It is rich in protein and ideal for a balanced diet. Ingredients (14 ingredients)

  • 2 Stück Pepper (red or yellow)
  • 1 Stück Onion
  • 2 Zehen Garlic
  • 250 g Button mushrooms
  • 100 ml Dry white wine
  • 100 ml Vegetable broth
  • 1 TL Lemon juice
  • nach Geschmack Sugar
  • 50 ml Cream
  • 400 g Cod fillet
  • 20 g Olive oil
  • Salt
  • Pepper
  • Fresh parsley (optional)

Preparation (9 steps)

Prepare peppers

Preheat the oven to 200°C top/bottom heat. Halve the peppers, core them and place them on a baking sheet with the skin side up. Drizzle with a little olive oil and season with salt and pepper. Roast the peppers in the preheated oven for approx. 20-25 minutes until the skin blisters and turns slightly black.

Chop onion and garlic

Add 1 peeled and quartered onion and 2 cloves of garlic to the mixing bowl and chop for 3 sec./level 5.

Sauté onion and garlic

Add 20g olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and sauté mushrooms

Add 250g mushrooms, cleaned and quartered, to the mixing bowl and sauté for 5 min./120°C/level 1.

Deglaze and season

Add 100ml dry white wine, 100ml vegetable broth, 1 tsp lemon juice, salt, pepper and 1 pinch of sugar to the mixing bowl and simmer for 10 min./100°C/level 1. Leave the measuring cup on.

Add cream

Add 50ml cream to the mixing bowl and stir in for 2 min./90°C/level 1. Leave the measuring cup on.

Add and cook cod

Add 400g cod fillet, cut into bite-sized pieces, to the mixing bowl and cook for 8 min./90°C/reverse rotation level 1. Leave the measuring cup on.

Add roasted peppers

Remove the roasted peppers from the oven, let them cool briefly, peel off the skin and cut into strips. Add the pepper strips to the mixing bowl and heat for 1 min./90°C/reverse rotation level 1. Leave the measuring cup on.

Season and serve

Season the dish with salt, pepper and possibly a little lemon juice. Serve the tender cod with mushrooms and roasted peppers. Garnish with fresh parsley as desired.
