  • 1 pound bucatini (dry)
  • 2 cups finely grated Pecorino Romano cheese
  • 1.5 tbsp freshly ground black pepper

Boiling the Pasta Water

Pour water into the mixing bowl and add 1 tsp salt. Bring to a boil for 10 Min./100°C/Stufe 1.

Cooking the Bucatini

Add 1 pound of dry bucatini to the boiling water in the mixing bowl and cook for 8 Min./100°C/Stufe 1/Linkslauf. Ensure the pasta is al dente.

Preparing the Cheese

While the pasta is cooking, place 2 cups of finely grated Pecorino Romano cheese into a large glass bowl and mix with a fork to ensure there are no lumps. This step is done outside of the Thermomix.

Combining Pasta and Cheese

Once the bucatini are al dente, carefully lift them out with a spaghetti fork or tongs and put them directly into the bowl with the cheese. Do not allow the water to drain too much. This step is done outside of the Thermomix.

Creating the Creamy Sauce

Add one ladle of pasta water to the bowl with the pasta and cheese. Stir the bucatini around until a cream has formed. This step is done outside of the Thermomix.

Adjusting the Sauce Consistency

Add more pasta water, little by little, until a thick cream has formed. This step is done outside of the Thermomix.

Final Touches and Serving

Sprinkle 1 1/2 tbsp freshly ground black pepper over the pasta. Toss and serve immediately. Add more pepper to taste. This step is done outside of the Thermomix.
