Description

This Coconut Sweet Potato Chicken Pan is a real comfort dish! The sweet potato provides a pleasant sweetness that harmonizes perfectly with the creamy coconut milk and the tender chicken. A touch of lime and cumin gives the dish an exotic note. I especially like to make this pan when I need to be quick, because it is ready in less than 40 minutes. Perfect for a light lunch or dinner. If you like, you can add some chili for more spice. An absolute favorite recipe!

Ingredients (9 ingredients)

  • 1 piece Broccoli
  • 10 g Ginger
  • 2 piece Chicken breast fillets
  • 4 piece Spring onions
  • 1 tbsp Coconut oil
  • 400 g Coconut milk
  • 1 piece Lime
  • to taste Cumin (ground)
  • to taste Pepper

Preparation (7 steps)

Prepare broccoli

Cut broccoli into small florets and blanch briefly in boiling salted water. Then quench with cold water and set aside.

Prepare sweet potatoes and ginger

Peel sweet potatoes and ginger. Cut sweet potatoes into small cubes and ginger into fine strips. Cut chicken breast fillets and spring onions into strips.

Sear chicken

Heat coconut oil in a deep pan, sear the chicken on all sides until crispy and remove from the pan. Set aside.

Sauté sweet potatoes and ginger

Thermomix® Setting
5 min/248°F/Speed 1 120

Put sweet potato cubes and ginger sticks into the mixing bowl and chop for 5 sec./speed 4. Then add 1 tbsp coconut oil and sauté for 5 min./120°C/speed 1.

Add coconut milk and simmer

Thermomix® Setting
10 min/212°F/Speed 1 Linkslauf 100 Reverse

Add coconut milk, lime juice and cumin to the mixing bowl and simmer for 10 min./100°C/speed 1 reverse, until the sweet potatoes are soft.

Add broccoli

Thermomix® Setting
5 min/212°F/Speed 1 Linkslauf 100 Reverse

Add the blanched broccoli to the mixing bowl and heat for 5 min./100°C/speed 1 reverse.

Season and serve

Thermomix® Setting
2 min/212°F/Speed 1 Linkslauf 100 Reverse

Season with salt and pepper. Fold in the chicken strips and spring onions and heat for 2 min./100°C/speed 1 reverse. Serve immediately.
