Description

This noodle soup with vegetables and meat is a comforting recipe, perfect for cold days. The combination of tender meat, fresh vegetables and soft noodles creates a nutritious and delicious soup. I usually prepare it when I need a quick and easy dish that warms my body and soul. It is ideal for a complete meal or as a starter before a main course. It is also an excellent way to take advantage of the vegetables you have in the fridge. Go ahead and try it, you'll love it!

Ingredients (8 ingredients)

  • 1.5 litro beef broth
  • 200 g lean beef
  • 1 puñado soup noodles
  • 1 piece large potato
  • 1 piece medium carrot
  • 0.5 piece red bell pepper
  • 1 tbsp fresh chopped parsley
  • 1 a gusto salt

Preparation (5 steps)

Preparation of the vegetables

Peel and cut the potato and carrot into small cubes. Cut the red bell pepper into thin pieces. Put the potato, carrot and pepper in the Thermomix bowl.

Add the broth and cook

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 1.5 liters of beef broth (or water with a beef broth cube) to the Thermomix bowl. Program 20 Min./100°C/Stufe 1.

Incorporate the meat and noodles

Thermomix® Setting
15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 200 g of lean beef cut into small pieces and 1 handful of soup noodles to the Thermomix bowl. Program 15 Min./100°C/Stufe 1/Linkslauf.

Season and finish cooking

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Add salt to taste. Program 5 Min./100°C/Stufe 1/Linkslauf to ensure all ingredients are cooked through.

Serve

Serve the soup hot and garnish with 1 tbsp of fresh chopped parsley.
