Description

This recipe for Cantuccini almond biscuits is a traditional Italian almond pastry that is perfect for the Christmas season or as a sweet accompaniment to coffee. It is prepared with the Thermomix®, which simplifies the preparation. The cookies are crunchy and aromatic, ideal for anyone who loves almonds. The baking time is approximately 35 minutes in total.

Ingredients (7 ingredients)

  • 250 g Flour
  • 1 tsp Baking powder
  • 150 g Sugar
  • 2 piece Eggs
  • 1 tsp Bitter almond flavor
  • 2 tbsp Almond liqueur
  • 150 g Almonds, whole

Preparation (8 steps)

Chop almonds

Thermomix® Setting

Put almonds in the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Mix sugar and eggs

Thermomix® Setting

Put sugar and eggs in the mixing bowl and mix for 2 min./speed 3.

Add flavor and liqueur

Thermomix® Setting
10 sec/Speed 2

Add bitter almond flavor and almond liqueur and mix for 10 sec./speed 2.

Mix flour and baking powder

Thermomix® Setting
20 sec/Speed 3

Put flour and baking powder in the mixing bowl and mix for 20 sec./speed 3.

Fold in chopped almonds

Add the chopped almonds and fold into the dough using the spatula.

Shape dough

On a floured work surface, form the dough into two rolls (approx. 5 cm diameter).

Bake

Place the dough rolls on a baking sheet lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for approx. 20 minutes.

Cut and bake a second time

Let the dough rolls cool slightly, then cut into slices about 1 cm thick. Place the slices back on the baking sheet and bake again at 160°C top/bottom heat for approx. 15 minutes until golden brown and crispy.
