Ingredients (20 ingredients)

  • 8 Stück Tortillas/Wheat flatbreads, 20 cm diameter
  • 400 g Ground meat, half and half
  • 150 g Gouda, freshly and finely grated
  • 1 Stück red bell pepper, fresh - finely diced
  • 1 Stück Peppers or chili - pitted! and finely diced
  • 1 Stück Onion, red, medium-sized - finely diced
  • 800 g Tomatoes, chopped
  • 285 g Corn, drained
  • 400 g Kidney beans, drained
  • 200 g Sour cream or Creme Fraiche
  • 150 g Cream cheese with paprika-chili
  • 2 Zehen Garlic - finely diced
  • 1 EL Tomato paste
  • 1 Prise Sugar
  • 1 TL Sweet paprika powder
  • 0.5 TL Paprika powder, hot
  • 2 EL Olive oil
  • Salt
  • Pepper from the mill
  • Cayenne pepper

Preparation (10 steps)

Preheat oven and prepare ingredients

Preheat the oven to 180°C top/bottom heat. Drain the corn and kidney beans well in a sieve. Clean and finely dice the bell pepper and chili pepper or chili. Peel and finely dice the onion and garlic as well.

Chop onion, garlic and chili

Put the onion in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula. Add garlic and chili and chop for 3 sec./level 7. Push down with the spatula.

Sauté onion, garlic and chili

3 min/248°F/Speed 1 120

Add 2 tbsp olive oil and sauté for 3 min./120°C/level 1.

Fry ground meat

Fry the ground meat in a separate pan with a pinch of salt until crumbly and brown. Then add to the mixing bowl.

Add tomato paste, bell pepper, corn and beans

Add 1 tbsp tomato paste, the diced bell pepper, the drained corn and the drained kidney beans to the mixing bowl and stir for 5 sec./level 3.

Prepare sauce

10 min/212°F/Speed 2 100

Add the chopped canned tomatoes, cream cheese, sour cream, sweet paprika powder, hot paprika powder, a pinch of sugar and salt to the mixing bowl and simmer for 10 min./100°C/level 2.

Season sauce

Thermomix® Setting
5 sec/Speed 3

Season the sauce with salt, pepper and cayenne pepper and add more seasoning if necessary. Stir for 5 sec./level 3.

Layer casserole

Place some ground meat sauce on the bottom of a casserole dish (approx. 30x20 cm). Cover with 2 tortillas. Spread more ground meat sauce on top and cover with 2 tortillas. Repeat this process until 4 tortilla layers have been created. Finish with ground meat sauce.

Spread cheese

Spread the freshly grated Gouda cheese on the top layer of ground meat sauce.

Bake casserole

Bake the Enchilada lasagna for about 20 minutes on the middle rack in the preheated oven until the cheese is nicely brown and melted.
