Dieses Chicken Pilau ist ein herzhaftes und aromatisches Gericht, das perfekt für gemütliche Abende ist. Ich mache es besonders gerne im Herbst und Winter, wenn man etwas Wärmendes braucht. Die Kombination aus zartem Hähnchen, duftendem Reis, süßen Sultaninen und gerösteten Pinienkernen ist einfach unwiderstehlich. Das Gericht ist nicht nur lecker, sondern auch relativ einfach zuzubereiten, besonders mit dem Thermomix®. Es eignet sich hervorragend als Hauptgericht für ein festliches Essen oder einfach als sättigende Mahlzeit für die ganze Familie. Die Zubereitung dauert etwa 45 Minuten, aber die Aromen entwickeln sich wunderbar beim Backen im Ofen.

Ingredients (9 ingredients)

  • 85 g pine nuts
  • 2 tbsp olive oil
  • 1 piece red onion
  • 1 tsp turmeric
  • 8 piece skinless boneless chicken thighs
  • 350 g long grain rice
  • 85 g sultanas
  • 850 ml chicken stock
  • 1 handful fresh coriander

Preparation (6 steps)

Pine nuts toasting

Preheat oven to 200°C/fan 180°C/gas 6. Toast the 85g pine nuts in a flameproof casserole dish on the hob, remove and set aside.

Onion and turmeric preparation

Peel and quarter 1 red onion. Place the onion in the mixing bowl and chop for 3 Sec./Stufe 5.

Sautéing onion and turmeric

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp olive oil and 1 tsp turmeric to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Chicken preparation

Add 8 skinless boneless chicken thighs to a pan and cook for 3-4 mins until browned all over. Remove from the pan and set aside.

Adding rice, sultanas and stock

Tip 350g long grain rice, 85g sultanas and 700ml chicken stock into the mixing bowl.

Cooking in the oven

Place the browned chicken thighs on top of the rice mixture. Cover with a lid and bake in the oven for 20 mins, checking halfway and adding more stock if needed. Cook until the chicken is done and the rice tender. Season to taste, then stir in the toasted pine nuts and serve sprinkled with fresh coriander.
