Description

This recipe for chicken breast in spicy tomato vegetables is an absolute highlight! The combination of tender chicken breast fillets and aromatic tomato vegetables with olives and thyme is simply irresistible. I like to make it when I need to be quick, but still want something special on the table. The dish is not only delicious, but also relatively light and perfect for a cozy dinner with friends or family. The preparation is straightforward and succeeds in no time with the Thermomix®. A real treat!

Ingredients (15 ingredients)

  • 1 clove Garlic
  • 2 piece Shallots
  • 1 bunch Soup greens
  • 1 tbsp Clarified butter
  • 1 Glas Kalamata olives without pit
  • 2 tbsp Pink Italy (vinegar)
  • 1 Glas Sugo piccante
  • 2 piece Bay leaves
  • 2 Pck. Golden breast fillets (4 pieces)
  • to taste Pink salt crystals
  • to taste Pepper from the mill
  • 2 tbsp Lesvos g.g.A. Olive oil
  • 200 g Cherry tomatoes on the vine
  • 4 Stiel Thyme
  • 1 tbsp Butter

Preparation (9 steps)

Chop garlic and shallots

Thermomix® Setting
3 sec/Speed 7

Put 1 clove garlic into the mixing bowl and chop for 3 sec./level 7. Add 2 shallots and chop for another 3 sec./level 5. Use the spatula to push everything down from the edge.

Chop soup greens

Clean, wash and cut 1 bunch of soup greens into coarse pieces and put into the mixing bowl. Chop for 5 sec./level 5. Use the spatula to push everything down from the edge.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp clarified butter and sauté for 3 min./120°C/level 1.

Simmer tomato vegetables

10 min/212°F/Speed 1 100

Pour off 1 jar of olives without pits and let them drain. Put 2 tbsp vinegar, 1 jar Sugo piccante, 200 ml water, 2 bay leaves and the olives into the mixing bowl. Simmer for 10 min./100°C/level 1.

Prepare meat

In the meantime, wash and pat dry 2 packs of breast fillets (4 pieces) and season with salt and pepper.

Fry meat

Heat 2 tbsp olive oil in a large pan and fry the meat in it for about 8 minutes until golden brown, turning occasionally.

Add tomatoes and thyme

In the meantime, wash 200 g cherry tomatoes and let them drain well. Also wash 4 sprigs of thyme and shake them well. Finally, add both to the meat in the pan with 1 tbsp butter and fry for about 1 minute.

Season tomato vegetables

Season the tomato vegetables with salt and pepper.

Arrange

Cut the meat and arrange it with the vegetables, tomatoes and thyme on the plates.
