Description

This recipe for chicken breast in tomato basil cream sauce is a hearty main course that is ready in about 40 minutes. The chicken breast is fried in a pan and then refined with a creamy sauce made from tomatoes, basil and processed cheese in the Thermomix®. Baked with mozzarella and parmesan, this casserole is a treat for the whole family.

Ingredients (12 ingredients)

  • 4 Chicken breast fillet(s)
  • Salt
  • Pepper
  • 1 EL Oil
  • 250 g Cocktail tomatoes
  • 0.5 Topf Basil
  • 200 g Cream
  • 100 g Cream processed cheese
  • Fat for the mold
  • 125 g Mozzarella
  • Parmesan
  • 1 EL Herb butter

Preparation (8 steps)

Prepare tomatoes and basil

Wash and halve the cocktail tomatoes. Wash the basil, shake dry and pluck the leaves.

Prepare chicken breast

Wash the chicken breast fillets, pat dry and season with salt and pepper.

Fry chicken breast

Heat oil in a pan and fry the chicken breast fillets in it until golden brown on both sides. Then remove from the pan and set aside.

Chop tomatoes

Put cocktail tomatoes in the mixing bowl and chop for 5 sec./level 4.

Prepare cream sauce

Add cream, processed cheese and basil to the chopped tomatoes in the mixing bowl. Cook for 8 min./90°C/level 2.

Season the sauce

Season the sauce with salt and pepper and add herb butter if necessary. Stir in for 10 sec./level 3.

Layer casserole

Grease a baking dish with fat. Place the fried chicken breast fillets in the baking dish and pour the tomato-basil cream sauce over them.

Bake casserole

Cut the mozzarella into slices and spread on the casserole. Sprinkle with parmesan as desired. Bake in a preheated oven at 200°C top/bottom heat for approx. 20 minutes until the cheese is golden brown.
