Description

This chicken pieces with zucchini is a dish that I often prepare in summer, when the zucchini is at its best. The recipe is simple and quick, perfect for a family dinner. The chicken remains tender and juicy, while the zucchini adds a touch of freshness. A drizzle of soy sauce enhances the flavors, creating a perfect balance. It is prepared in less than an hour and is an excellent option for a healthy and tasty meal. Ideal to serve with basmati rice or baked potatoes. Try it, it will win you over!

Ingredients (8 ingredients)

  • 500 g Chicken breast
  • 300 g Zucchini
  • 1 costa Celery
  • 1 piece Carrot
  • 1 piece Onion
  • 3 tbsp Extra virgin olive oil (EVO)
  • 50 ml White wine
  • 2 tbsp Soy sauce

Vegetable preparation

1 celery stalk, 1 carrot and 1 onion in the bowl and chop for 3 Sec./Stufe 5.

Sauté the vegetables

Thermomix® Setting

Add 2-3 tablespoons of extra virgin olive oil and sauté for 3 Min./120°C/Stufe 1.

Brown the chicken

Transfer the vegetables to a bowl. Cut 500g chicken breast into cubes. In a large pan, heat a drizzle of extra virgin olive oil over medium-high heat. Add the chicken pieces and brown them on all sides until they are golden and cooked evenly. Season with salt and black pepper during cooking.

Deglaze with white wine

When the chicken is cooked, pour 50ml white wine into the pan. Let the alcohol evaporate for a couple of minutes, then lower the heat slightly.

Add the zucchini

Cut 300g zucchini into rounds. Add the zucchini rounds to the pan. Cook for another 3-4 minutes, stirring occasionally, until the zucchini softens but remains crunchy.

Complete the cooking

Add the sautéed vegetables and 2 tablespoons of soy sauce and mix well to distribute it evenly among the ingredients. Taste and adjust the seasoning if necessary. Cook for 2 Min./100°C/Stufe 1.

Serve

Once all the vegetables are cooked and the flavors have blended, remove the pan from the heat. Transfer the chicken pieces with zucchini to a serving dish and serve hot.
