Description

This chicken stewed with vegetables and olives is a comforting and tasty dish, perfect for autumn or winter evenings. I often prepare it for Sunday lunch, because it is easy to make and pleases the whole family. The chicken, tender and juicy, is imbued with the flavours of sun-drenched vegetables and black olives. A pinch of saffron brings a touch of exoticism to this Mediterranean dish. Feel free to add other seasonal vegetables, such as courgettes or aubergines, to vary the pleasures. This dish is even better reheated the next day, as the flavours have had time to develop. Accompany it with basmati rice or steamed potatoes for a complete and balanced meal.

Ingredients (14 ingredients)

  • 2 kg Chicken
  • 500 g Tomato(es)
  • 2 piece Red pepper(s)
  • 1 bunch White onion(s)
  • 3 clove Garlic
  • 50 g Black olives
  • 1 cube Broth
  • Flour
  • Olive oil
  • 1 branche Thyme
  • 1 Feuille(s) of bay leaf
  • Saffron
  • Salt
  • pepper

Preparation (7 steps)

Preparation of the chicken

Cut the chicken into pieces on a cutting board. Put the chicken pieces in a bowl and sprinkle with flour. Season with salt and pepper according to your taste. Set aside.

Preparation of the vegetables

Finely chop the onion stalks and cut the onion into rings. Wash the tomatoes and peppers. Cut the tomatoes into quarters and the peppers into strips. Chop the thyme and bay leaf. Set aside.

Cooking the chicken

Pour the olive oil into a pan and heat over medium heat. Brown the chicken pieces until they are golden on all sides. Remove the chicken from the pan and set aside.

Preparation of the sauce base

Cooking the onions

Adding the vegetables and chicken

Add the tomatoes, peppers, whole garlic cloves, olives, thyme, bay leaf and chicken to the Thermomix bowl. Add the salt, pepper, saffron and broth cube. Sprinkle with water.
