Guys, what a smell! This Rustic Chicken with Peppers is a real comfort food, perfect for a family dinner. The chicken, very tender, goes perfectly with the sweetness of the peppers, which I prefer in season, nice and fleshy and colorful. The peeled tomatoes, strictly Italian, give that touch of acidity that balances everything. A drizzle of extra virgin olive oil, a glass of white wine that fades and gives an unmistakable aroma, salt, pepper... and the Thermomix® does the rest! The meat remains juicy and the sauce is for scooping with bread. It is a simple, genuine dish that everyone likes, even children. If you want, you can add a pinch of chili pepper for a more lively touch. Trust me, it's a recipe that will win you over!

Preparation of the peppers

Clean the peppers by removing the internal filaments and seeds. Cut them into strips and then into small pieces. Set aside.

Brown the chicken

In a large pan, heat the extra virgin olive oil. Sauté the skinless chicken, season with salt and pepper. Cook for 15 minutes, until the meat is well browned on all sides.

Deglaze with white wine

Pour 100 ml of white wine over the browned chicken and set 2 Min./Varoma/level 1 without the measuring cup to evaporate the alcohol.

Adding peppers and tomatoes

Add the chopped peppers and 400 g of peeled tomatoes, previously crushed with a fork, into the Mixtopf. Mix well with the spatula.

Cooking the chicken with peppers

Thermomix® Setting
60 min/212°F/Speed 1/Linkslauf 100 Reverse

Cover with a lid and cook over low heat for about 1 hour. Transfer the chicken and peppers to the Mixtopf. Add 100 ml of water. Set 60 Min./100°C/level 1/Linkslauf. Check and mix occasionally with the spatula.

Her version was a little different, simpler, but the taste was unmistakable. I tried to recreate that magic, adapting it to modern times and my faithful Thermomix®. The key to this dish lies in the quality of the ingredients. The chicken, of course, must be of excellent origin, preferably free-range, with crispy skin and firm meat. The peppers, then, are essential. I recommend using seasonal peppers, those that are nice and fleshy and colorful, perhaps a mix of yellow, red and green for a more lively result even to the eye. The peeled tomatoes, strictly Italian, must be of good quality, with an intense and slightly acidic flavor that balances the sweetness of the peppers. The extra virgin olive oil, finally, must be fruity and fragrant, a real condiment that enhances all the other flavors. For the preparation with the Thermomix®, it is important to carefully follow the steps. Searing the chicken in a pan is essential to seal in the juices and give the meat a more intense flavor. When deglazing with white wine, it is important not to put the measuring cup, to allow the alcohol to evaporate completely. During cooking in the Thermomix®, it is advisable to use the "Linkslauf" (left rotation) function to prevent the chicken from flaking too much. Also, it is important to check from time to time and mix gently with the spatula to prevent the bottom from sticking. For a vegetarian or vegan version, you can replace the chicken with pre-cooked chickpeas or with sliced ​​champignon mushrooms. In this case, you can reduce the cooking time in the Thermomix®. As for the spices, you can add a pinch of chili pepper for a more lively touch, or a sprig of rosemary or a few sage leaves for a more Mediterranean aroma. Rustic Chicken with Peppers is a versatile dish that lends itself to different interpretations. It can be served with a steaming polenta, with basmati rice, with baked potatoes or simply with homemade bread to scoop up the sauce. For an extra touch, you can garnish with a few fresh basil leaves or a drizzle of raw extra virgin olive oil. If there are any leftovers, the Rustic Chicken with Peppers can be kept in the refrigerator for a couple of days. It can also be prepared in advance and reheated when serving. In fact, it is often even better the next day, when the flavors have blended together even more.
