Description

This chicory casserole is a real feel-good classic that I really enjoy preparing in the Thermomix®! The slightly bitter chicory, which is not for everyone, is wonderfully softened by the salty ham and the creamy cheese sauce. The onion provides a fine seasoning. The Thermomix® makes preparing the béchamel sauce child's play - no burning, no lumps! The sauce is refined with crème fraîche and seasoned with nutmeg, which gives the whole thing a special touch. The casserole is perfect for cold days and can be prepared very well in advance. The cheese gives it a nice crust and it stays juicy inside. Ideal for those who want to try chicory in a different way or simply love a quick, delicious casserole! Even children who otherwise spurn vegetables can often be convinced with it.

Ingredients (12 ingredients)

  • 800 g Chicory
  • 150 g Diced ham
  • 1 Zwiebel Onion
  • 40 g Butter
  • 40 g Flour
  • 400 ml Milk
  • 100 ml Vegetable stock
  • 100 g Crème fraîche
  • 150 g Grated cheese
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg

Chop onion

Peel and halve the onion and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion

Add butter to the onions in the mixing bowl. Sauté for 3 min./120°C/speed 1.

Add flour

Add flour to the onions and sauté for 1 min./100°C/speed 2.

Deglaze with milk

Thermomix® Setting

Add milk and vegetable stock to the mixing bowl. Cook for 8 min./100°C/speed 2. Leave the measuring cup on.

Refine sauce

Add crème fraîche, salt, pepper and nutmeg to the mixing bowl. Stir for 30 sec./90°C/speed 2.

Prepare chicory

Clean and halve the chicory and place in a casserole dish.

Fry ham

Fry the diced ham in a separate pan.

Layer casserole

Pour half of the sauce over the chicory. Distribute the diced ham over it and cover with the remaining sauce.

Gratinate cheese

Sprinkle grated cheese over the casserole and bake in a preheated oven at 200°C top/bottom heat for approx. 25 minutes until the cheese is golden brown.

Chicory with ham and cheese gratinated - for me, this is a dish that awakens childhood memories. My grandma always prepared it in the autumn when chicory was in season. The slightly bitter taste of the vegetable, combined with the hearty ham and creamy béchamel, was simply unbeatable. I have refined the recipe over the years and with the Thermomix® the preparation is now even easier and more foolproof. The chicory is of course the main ingredient. Make sure that the heads are firm and closed. The bitter substances are a matter of taste, but if you like it milder, you can cut out the stalk in a wedge shape. The ham, preferably diced, brings a salty and smoky note to the casserole. The onion provides an aromatic base and is finely chopped in the Thermomix® before being sautéed in butter. The béchamel sauce is the heart of the casserole. The butter is sweated with the flour in the Thermomix® to form a roux, which later binds the sauce. It is important that the milk and vegetable stock are slowly poured in while the Thermomix® stirs to avoid lumps. The crème fraîche makes the sauce particularly creamy and the nutmeg gives it a warm, spicy note. Salt and pepper should of course not be missing. The grated cheese, preferably a mixture of Gouda and Emmentaler, provides the golden brown crust and the hearty taste. When frying the ham in the pan, make sure that it does not become too crispy, it should still be juicy. When layering the casserole, make sure that the chicory is well covered with the sauce so that it does not dry out. For a vegetarian version, the ham can simply be omitted or replaced with smoked tofu. If you like it vegan, you can use plant-based alternatives instead of milk and crème fraîche and replace the cheese with vegan grated cheese. You can also vary the spices: garlic, thyme or rosemary go perfectly with chicory. The chicory casserole tastes best when it comes fresh from the oven. A fresh salad or a crispy baguette goes well with it. But it can also be prepared well in advance: The casserole can be layered the day before and then gratinated shortly before serving. Leftovers can be stored in the refrigerator and reheated the next day.
