This Chinese cabbage salad with chicken, peanuts and lemon is a real delight! I often prepare it for a quick lunch or a picnic. The Chinese cabbage brings a crunchy texture, the chicken a source of protein, the peanuts crunchiness and the lemon a touch of freshness. It is a complete and balanced dish, perfect for sunny days.   • 1 piece Chinese cabbage
  • 3 piece Chicken cutlet
  • 2 poignée Peanut
  • 1 piece Lemon juice
  • 1 bouquet Fresh mint
  • Olive oil
  • Pepper

Chicken preparation

Cut the 3 chicken cutlets into small pieces. Heat a drizzle of olive oil in a frying pan over medium heat. Sauté the pieces of chicken cutlets for 5 minutes, mixing well. Remove the pan from the heat and set aside.

Preparation of Chinese cabbage

Clean and cut the 1 Chinese cabbage into thin strips. Put it in a salad bowl.

Preparation of mint and peanuts

Clean and pat dry the 1 bunch of fresh mint. Put the mint and the 2 handfuls of peanuts in the Thermomix bowl.

Salad assembly

Add the peanut-mint mixture to the Chinese cabbage in the salad bowl. Pour the juice of 1 lemon, a drizzle of olive oil and pepper to your taste.

Finally add the cooled chicken pieces and stir again.

I then adapted the recipe to my taste, using ingredients more easily available in Europe and integrating my faithful Thermomix® to simplify certain steps. The Chinese cabbage is the main ingredient of this salad. It brings a crunchy texture and a sweet and slightly sweet flavor. It is important to cut it into thin strips so that it is pleasant to eat. The chicken, meanwhile, is a source of lean protein that brings consistency to the salad. I prefer to use chicken cutlets, because they cook quickly and stay tender. The peanuts add a touch of crunch and umami flavor. It is important to crush them finely so that they spread evenly in the salad. Fresh mint brings a note of freshness and fragrance. The lime, finally, brings a touch of acidity that balances the flavors and enhances the taste of all the ingredients. For the preparation, the Thermomix® is a valuable ally. It allows you to finely chop the peanuts and mint in seconds, effortlessly. Just put them in the bowl and mix at speed 7 for 5 seconds. Be careful not to mix too long, otherwise you risk getting a paste. If you do not have a Thermomix®, you can chop the peanuts and mint by hand, with a sharp knife. For the chicken, it is important to cook it over medium heat so that it does not dry out. You can also grill it on the barbecue for a smoky flavor. This salad is very versatile. For a vegetarian or vegan version, you can replace the chicken with smoked tofu or chickpeas. You can also add other vegetables, such as grated carrots, diced cucumbers or sliced peppers. For a touch of exoticism, you can add fresh coriander, grated ginger or chopped red pepper. You can also vary the spices, using curry, paprika or cumin. I usually serve this salad as a starter, during a light lunch or a picnic. It goes well with rice noodles, spring rolls or chicken skewers. You can also serve it as a main course, accompanied by a soup or a green salad. The Chinese cabbage salad with chicken keeps well in the refrigerator for 24 hours. It is best to prepare it in advance, because the flavors develop over time. You can also prepare the different ingredients separately and assemble them just before serving.
