Description

These meatballs in chipotle sauce are a comforting and flavorful dish, perfect for a family meal or a special dinner. The combination of the juicy meat with the smoky and spicy touch of the chipotle is simply delicious. I have been preparing them for years and they are always a success. The sauce, made with fresh tomatoes and chipotle chilies, gives it an authentic Mexican touch. They are prepared in a short time and are ideal to accompany with white rice or a fresh salad. A dish that will transport you directly to Mexico!

Ingredients (12 ingredients)

  • 500 gramos ground beef or mixed
  • 1 piece egg
  • 0.5 cup breadcrumbs
  • 2 tbsp finely chopped white onion
  • 1 pinch garlic powder
  • salt
  • pepper
  • 4 piece tomatoes
  • 2 dientes garlic
  • 1 trozo onion
  • 3 piece chipotle chilies
  • 1 tbsp oil

Preparation (6 steps)

Preparation of the meatballs

In a bowl, mix 500 grams of ground meat (beef or mixed) with 1 egg, ½ cup of breadcrumbs, 2 tablespoons of finely chopped white onion, 1 pinch of garlic powder, salt and pepper to taste. Knead lightly with your hands until all ingredients are integrated. Form balls the size of a tablespoon and reserve.

Sealing the meatballs

In a pan with 1 tablespoon of oil, brown the meatballs on all sides over medium heat until sealed. Remove the meatballs from the pan and reserve.

Preparation of the sauce

Place 4 tomatoes, 2 cloves of garlic, 1 piece of onion and 3 chipotle chilies in the Thermomix glass.

Crush the sauce

Crush the ingredients for the sauce for 30 seconds at speed 10. Add a pinch of salt.

Cooking the sauce

Pour the crushed sauce into the Thermomix glass and cook for 5 minutes at 100°C on speed 2.

Incorporation of the meatballs

15 min/194°F/Linkslauf Speed 1 90 Reverse

Incorporate the sealed meatballs into the Thermomix glass with the sauce. Cook over low heat for 15 minutes at 90°C on speed 1 with left turn. Correct the seasoning and add salt to taste if necessary.
