Description

Chocolate meringues are fine cookies from the Thermomix® with egg white, sugar and dark chocolate. The recipe yields about 30 pieces and has a preparation time of 120 minutes, of which 45 minutes is active working time. Ideal as a Christmas dessert, with coffee or as a sweet treat for festive occasions. The meringue cookies are a chocolatey treat for any occasion.

Ingredients (9 ingredients)

  • 2 piece Egg white
  • 100 g Sugar
  • 50 g Grated chocolate (bittersweet)
  • 3 tbsp Level tsp cocoa powder
  • 150 g White chocolate
  • 250 g Butter
  • 150 g Sugar
  • Jam
  • Chocolate (for dipping)

Preparation (8 steps)

Whisk egg whites until stiff

Put 2 egg whites in the mixing bowl and whisk with the butterfly for 3 min/speed 3.5 until stiff. Transfer and set aside.

Mix ingredients

Add 100 g sugar, 50 g grated chocolate (bittersweet) and 3 tbsp level tsp cocoa powder to the stiffly beaten egg white and carefully fold in.

Pipe on meringue

Fill the mixture into a piping bag and pipe onto a baking sheet lined with baking paper.

Dry meringue

Dry the meringues in the oven at 140 degrees convection for 25 minutes.

Prepare chocolate cream

Put 150 g white chocolate in pieces into the mixing bowl and chop for 10 sec/speed 8.

Melt chocolate

Melt the chopped chocolate for 3 min/50°C/speed 2.

Finish cream

Add 250 g butter and 150 g sugar to the melted chocolate and stir for 20 sec/speed 3.

Completion

Pipe the cream in a circle on the baked bases, add jam with a piping bag, place meringue on top and dip in chocolate.
