Description

This chorizo rice is a flavorful and satisfying dish that's perfect for a quick weeknight meal. Ingredients (9 ingredients)

  • 250 g small cooking chorizo
  • 1 piece onion
  • 2 clove garlic cloves
  • 1 tsp sweet smoked paprika
  • 250 g basmati rice
  • 500 ml hot chicken stock
  • 2 piece roasted peppers
  • 395 g can cherry tomato
  • 85 g pitted green or Kalamata olive

Preparation (6 steps)

Prepare Chorizo

Heat a large frying pan on medium-high heat. Add the sliced chorizo halves, cut-side down, and cook until the oil starts to come out and they begin to crisp at the edges. Remove chorizo from pan and set aside.

Chop Onion and Garlic

Add 1 onion to the mixing bowl and chop for 3 sec/speed 5.

Sauté Onion and Garlic

Add 2 garlic cloves to the mixing bowl and chop for 3 sec/speed 7. Scrape down the sides of the mixing bowl with a spatula. Add the cooked chorizo to the mixing bowl and sauté for 3 min/120°C/speed 1.

Add Rice and Paprika

Add 1 tsp sweet smoked paprika and 250g basmati rice to the mixing bowl and mix for 10 sec/speed 2.

Cook Rice

5 min/212°F/Speed 1 100

Add 500ml hot chicken stock and 2 roasted peppers to the mixing bowl. Cook for 5 min/100°C/speed 1.

Add Tomatoes and Olives

8 min/212°F/Speed 1 100

Add 395g can cherry tomato and 85g pitted green or Kalamata olive to the mixing bowl. Cook for 8 min/100°C/speed 1.
