Description

This Madrid stew is a comforting spoon dish, perfect for cold winter days. The recipe, passed down from generation to generation, stands out for its intense flavor and the combination of chickpeas, various meats, and fresh vegetables. The chickpeas, soaked the night before, are slowly cooked together with the chicken, hen, beef shin, ham, and sausages, creating a rich and nutritious broth. Served in two courses, first the noodle soup and then the meat and vegetables, this stew is a feast for the palate. An ideal dish to share with the family during the Christmas holidays!

Ingredients (17 ingredients)

  • 600 ggarbanzos chickpeas
  • 1 cuarto chicken
  • 1 cuarto hen
  • 250 g beef shin
  • 1 punta ham
  • 3 atajados chorizo
  • 3 atajados black pudding
  • 1 trozo streaky bacon
  • 1 hueso salted spine
  • 1 hueso ham
  • 3 piece garlics
  • 1 piece tomato
  • 1 piece cabbage
  • potato
  • carrot
  • leek
  • mint

Preparation (6 steps)

Soaking the chickpeas

The night before, put the 600 g of chickpeas in a bowl with warm water, a pinch of salt and a pinch of baking soda. Leave to soak overnight.

Cooking the meats (except chorizo and black pudding)

Thermomix® Setting
60 min/212°F/Velocidad 1 100

The next day, place the quarter of chicken, the quarter of hen, the 250 g of beef shin, the ham tip, the piece of streaky bacon, the salted spine bone and the ham bone in the Thermomix bowl. Cover with water up to the maximum mark. Program 60 Min./100°C/Speed 1. Remove the foam that forms during cooking with a skimmer.

Add chickpeas and vegetables

Add the soaked chickpeas, 1 cabbage cut into quarters, peeled and chopped potato, peeled and chopped carrot and clean and chopped leek to the Thermomix bowl. Program 60 Min./100°C/Speed 1.

Incorporate chorizo, black pudding, garlic, tomato and mint

Thermomix® Setting
10 min/212°F/Velocidad 1 100

Add the 3 pieces of chorizo, the 3 pieces of black pudding, 3 crushed garlic cloves, 1 whole tomato with skin and mint to taste. Program 10 Min./100°C/Speed 1.

Remove and shred the meat

Remove everything from the Thermomix bowl. Take out the meat and shred it as much as possible, cleaning it of bones.

Prepare the soup and serve

Separate the broth to make a bread or noodle soup. Serve the stew on a plate together with the cooked cabbage sautéed with two cloves of garlic in a pan.
