Description

This garlic chicken is a traditional Spanish recipe that always succeeds at home. The secret is in the garlic sauté and the touch of Sherry wine, which gives it a very special flavor. The meat is tender and juicy, almost like a stew, thanks to the slow cooking in chicken broth. It is a perfect dish to share with family or friends, especially on the cooler days. It is prepared in just over an hour and is ideal to accompany with some fried potatoes or a good bread to dip in the sauce. A classic that never fails!

Ingredients (8 ingredients)

  • 1700 g Chopped whole chicken
  • 5 clove Cloves of garlic
  • Extra virgin olive oil
  • Wheat flour
  • 10 ml Lemon juice
  • 500 ml Chicken broth
  • 150 ml Sherry wine
  • 1 hoja Bay leaf

Preparation (6 steps)

Flavor the oil with garlic

Thermomix® Setting

Place 5 cloves of garlic with skin in the Thermomix glass. Add extra virgin olive oil to cover the garlic. Program 8 Min./120°C/Stufe 1. Remove the garlic and reserve the flavored oil.

Brown the chicken

Season the chicken pieces with salt and pepper. Lightly flour each piece with wheat flour. In a separate pan, heat the reserved flavored oil over high heat. Brown the chicken on all sides until golden brown. Remove the chicken and reserve.

Add lemon juice

Pour 10 ml of lemon juice into the pan with the oil where the chicken was browned. Stir so that all the pieces of chicken are impregnated with the flavor of the lemon.

Cook the chicken in sauce

Add 500 ml of chicken broth, 2 raw garlic cloves chopped into slices and a bay leaf to the pan with the chicken. Cook over medium heat for approximately 30 minutes, or until the broth has reduced and the chicken is tender.

Incorporate the Sherry wine

Add 150 ml of Sherry wine to the pan. Let it simmer over low heat for about 5 minutes to allow the alcohol to evaporate.

Serve the garlic chicken

Serve the chicken on a platter. Deglaze the bottom of the pan by scraping with a wooden spoon to bind the sauce. Pour the sauce over the chicken. Garnish with candied garlic (optional).
