Description

This recipe for cod with vegetables in dill sauce is an absolute highlight for warm days! The tender fish harmonizes wonderfully with the crisp vegetables and the fresh dill sauce. I have been making this dish for years and it is always well received. It is easy to prepare and tastes simply delicious. Ideal for a light lunch or a summer dinner. The long cooling time allows the flavor to permeate wonderfully. A great dish that is also easy to prepare!

Ingredients (11 ingredients)

  • 500 g Cod fillet(s)
  • 4 tbsp Salt
  • 1 Stange/n Leek
  • 1 Paprikaschote(n) Red bell pepper
  • 4 tbsp Oil
  • to taste Pepper
  • to taste Worcestershire sauce
  • 1 tbsp Butter
  • 1 bunch Dill
  • 150 g Sour cream
  • 2 tbsp Capers in brine

Preparation (8 steps)

Prepare fish

Lightly sprinkle the cod fillets with 2 tbsp salt and drizzle with 2 tbsp lemon juice. No Thermomix setting required.

Prepare leek and pepper

Slit the leek lengthwise, clean and wash. Cut into fine rings. Halve, clean and wash the bell pepper. Cut pepper halves into fine strips. No Thermomix setting required.

Sauté vegetables

Add 4 tbsp oil to the mixing bowl, add leek rings and pepper strips and sauté for 3 min./120°C/speed 1.

Season vegetables

5 sec/Speed 3

Season with the remaining lemon juice, 2 tbsp salt, pepper and some Worcestershire sauce. Mix for 5 sec./speed 3.

Cook fish

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Place the fish on the vegetables, distribute 1 tbsp butter in flakes on top. Attach the Varoma and cook for 10 min./Varoma/speed 1.

Let cool

Remove from the Thermomix and let cool, covered. No Thermomix setting required.

Prepare dill sauce

Briefly rinse the dill and chop finely. Add dill, 150 g sour cream and 2 tbsp caper brine to the mixing bowl, season with salt and pepper and mix for 10 sec./speed 3.

Layer and let steep

Remove the fish fillets from the Varoma, divide into small pieces and layer alternately with the vegetables in a bowl. Drizzle each layer of fish with some dill sauce and sprinkle with capers. Let it steep, covered, in the refrigerator overnight. No Thermomix setting required.
