Description

These meat skewers with an unusual coffee marinade are a real highlight at any barbecue party! The meat becomes wonderfully tender and gets a slightly tart, aromatic note. I serve it with a fresh carrot and onion salad with yogurt dressing, which perfectly complements the flavors. The salad can be prepared easily and the skewers are quick to grill. A recipe that is always well received by my guests and is guaranteed to spark conversation! Ideal for those who want to try something new.

Ingredients (22 ingredients)

  • 600 g Pork, e.g. loin
  • 2 tsp Coffee beans
  • 0.5 tsp Black peppercorns
  • 0.5 tsp White peppercorns
  • 2 piece Cloves
  • 0.5 tsp Cumin (ground)
  • 1 piece Lemon
  • 1 tbsp Lemon juice
  • 2 tbsp Orange juice
  • 150 ml Olive oil
  • 500 g Coarse sea salt
  • 1 piece Large red onion
  • 1 tbsp Ghee from the organic shop
  • 1 tsp Mustard seeds
  • 2 tsp Sugar
  • 5 tbsp Curry leaves, fresh or dried
  • 2 tbsp Lemon juice
  • 5 tbsp Yogurt
  • to taste Salt
  • to taste Pepper
  • 4 tsp Sesame
  • 1 Handvoll Mint leaves

Preparation (11 steps)

Chop coffee beans and spices

Thermomix® Setting
15 sec/Speed 10

Put 2 tsp coffee beans, 0.5 tsp black peppercorns, 0.5 tsp white peppercorns and 2 cloves into the mixing bowl and chop for 15 sec./speed 10.

Prepare marinade

Thermomix® Setting
10 sec/Speed 3

Add 0.5 tsp cumin (ground), zest of a knife tip of lemon, 1 tbsp lemon juice, 2 tbsp orange juice, 150 ml olive oil and 500 g coarse sea salt and stir for 10 sec./speed 3.

Marinate meat

Put 600 g diced pork in a bowl, pour the marinade over it and mix well. Marinate covered in the refrigerator overnight (at least 24 hours).

Prepare carrots and onions

Peel 1 large red onion and halve it. Peel 2-3 carrots and cut both into coarse pieces.

Chop onion and carrots

Put onion and carrots in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula and repeat the process.

Sauté mustard seeds

Put 1 tbsp ghee in the mixing bowl and melt for 3 min./120°C/speed 1. Add 1 tsp mustard seeds and sauté for another 2 min./120°C/speed 1.

Add curry leaves and sugar

Thermomix® Setting
1 min/212°F/Speed 1 100

Add 2 tsp sugar and 5 tbsp curry leaves (fresh or dried) and stir in for 1 min./100°C/speed 1 until the sugar melts slightly.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Linkslauf Speed 1 120 Reverse

Add the chopped carrots and onions and sauté for 3 min./120°C/reverse rotation speed 1.

Season the salad

Transfer the vegetables to a bowl and season with 2 tbsp lemon juice, 5 tbsp yogurt, salt and pepper. Let it steep for at least 30 minutes.

Grill meat

Remove the meat from the marinade and strip it off. Thread the diced meat onto barbecue skewers and grill on the hot grill for 6–10 minutes, turning.

Arrange the salad

Season the salad and spread on plates. Sprinkle 1 tsp sesame seeds over each. Rinse the mint, shake dry and spread the leaves on the salad. Arrange with the skewers and serve.
