Description

This creamy pointed cabbage in mustard sauce is a wonderfully simple and quick dish that works perfectly as a side dish or vegetarian main course. I especially like to make it in autumn when the pointed cabbage is in season. The combination of the mild cabbage, the spicy mustard sauce and the creamy cream is simply unbeatable. If you like, you can add some smoked tofu or fried diced bacon. Potatoes or rice go well with this.

Ingredients (11 ingredients)

  • 700 g Pointed cabbage
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tbsp Butter
  • 150 ml Vegetable broth
  • 2 tbsp Mustard (medium hot)
  • 200 ml Cream
  • 1 tsp Sugar
  • 1 pinch Caraway (ground)
  • Salt
  • Pepper

Preparation (7 steps)

Prepare pointed cabbage

Halve the pointed cabbage, remove the stalk, quarter, wash and drain. Cut the cabbage into thin strips and set aside.

Chop onion and garlic

Peel the onion and garlic. Place the onion in the mixing bowl and chop for 3 sec./speed 5. Add garlic and chop for another 3 sec./speed 7.

Sauté onion and garlic

Add butter and sauté for 3 min./120°C/speed 1.

Add the sliced pointed cabbage to the mixing bowl and sauté for 5 min./120°C/reverse speed 1.

Add vegetable broth and mustard

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add vegetable broth and mustard and simmer for 5 min./100°C/reverse speed 1.

Add cream and simmer

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Pour in the cream and continue to cook for 5 min./90°C/reverse speed 1 until the pointed cabbage is soft and the sauce has thickened slightly.

Season and serve

Season with salt, pepper, sugar and caraway and serve.
