Description

These savory pancake rolls with mushroom filling are a delicious and satisfying main course. The pancakes are prepared in the Thermomix® and filled with a creamy mushroom filling. With bacon they are hearty, without bacon vegetarian. Preparation takes about 75 minutes and yields 4 servings. Ideal for a quick family meal.

Ingredients (14 ingredients)

  • 4 Stück Eggs
  • 500 ml Milk
  • 300 g Flour
  • 1 Prise Salt
  • Butter or oil for frying
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 400 g Champignons
  • 1 EL Olive oil
  • 100 g Bacon
  • 2 EL chopped Parsley
  • Salt
  • Pepper
  • 200 g Sour cream

Preparation (6 steps)

Prepare pancake batter

Thermomix® Setting
20 sec/Speed 3, 30 sec/Speed 4

Put eggs and milk in the mixing bowl and stir for 20 sec/speed 3. Add flour and salt and stir for 30 sec/speed 4 to form a smooth dough. Transfer the dough and let it rest briefly.

Bake pancakes

Heat some butter or oil in a pan and bake 4-6 thick pancakes one after the other. Use 2 ladles of batter per pancake.

Chop onion and garlic

3 sec/Speed 5, 3 sec/Speed 7

Put onion in the mixing bowl and chop for 3 sec/speed 5. Add garlic and chop for 3 sec/speed 7. Use the spatula to push everything down from the edge.

Sauté onion and bacon

Thermomix® Setting
3 min/248°F/Speed 1 120

Put olive oil and bacon in the mixing bowl and sauté for 3 min/120°C/speed 1.

Add and fry champignons

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Add champignons, garlic, salt and pepper and fry for 5 min/120°C/reverse rotation speed 1. Use the spatula to push everything down from the edge.

Fill and garnish pancakes

Spread sour cream on the pancakes, top with the mushroom mixture and garnish with chopped parsley. Roll up or fold up the pancakes and serve.
