Description

A simple and quick mushroom omelet, perfect for breakfast or a light lunch.

Ingredients (8 ingredients)

  • 150 g small oyster mushrooms
  • 150 g Button mushrooms
  • 1 Stück small red onion
  • 75 g young spinach
  • 6 Stück Eggs (Size M)
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 3 EL Oil

Preparation (6 steps)

Chop onion

Thermomix® Setting

Peel, halve, and place 1 small red onion in the mixing bowl. Chop for 3 sec./speed 5.

Prepare mushrooms

Clean 150 g small oyster mushrooms and 150 g button mushrooms and halve depending on size. Remove the chopped onion from the mixing bowl and set aside together with the mushrooms.

Prepare spinach

Wash 75 g young spinach and drain well. Set aside.

Prepare eggs

Whisk 6 eggs (size M) in a bowl and season with salt and pepper. Set aside.

Fry mushrooms and onions

Heat 2 tbsp oil in a pan (approx. 22 cm Ø). Fry mushrooms and onions in it for about 5 minutes and season with salt and pepper. Add spinach, remove from the pan and keep warm.

Bake omelet

Heat 1 tbsp oil in the pan. Pour eggs into the pan and let it set a little while stirring with a wooden spoon for 2-3 minutes. Bake omelet in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 5 minutes. Place mushrooms on the omelet and serve immediately.
