Description

This vegetarian tortellini pan is a quick and easy main course that's ready in just 35 minutes. The combination of tortellini, vegetables, and a creamy sauce makes it a satisfying meal. Ideal for after work or as a quick meal for the whole family. The dish is vegetarian and can be easily adapted to individual preferences.

Ingredients (14 ingredients)

  • 1 Pck. Tortellini, vegetarian filling
  • 2 Handvoll Green beans, halved
  • 0.5 Stück Broccoli florets
  • Butter
  • 1 Stück Leek(s)
  • 200 g Brown mushrooms, quartered
  • 2 Stück Garlic clove(s), chopped
  • Salt and pepper, freshly ground
  • Chili powder
  • 1 EL Vegetable broth powder
  • 200 ml Plant-based cream (cooking plant-based cream)
  • Cornstarch for thickening, optional
  • 10 Stück Cocktail tomatoes, halved
  • Parmesan, freshly grated or other vegetarian hard cheese

Preparation (11 steps)

Cook the tortellini

Cook the tortellini in a pot of salted water according to package directions until al dente, drain and set aside.

Cook green beans and broccoli

Cook the green beans in a pot of salted water for about 8 minutes, then add the broccoli florets for another 3 - 4 minutes. Drain the vegetables, quench them in cold water and set aside.

Slice the leek

Slice the leek.

Quarter the mushrooms

Quarter the mushrooms.

Chop the garlic

Place the garlic cloves in the mixing bowl and chop for 3 sec./speed 7.

Sauté leek, mushrooms and garlic

Add the butter to the mixing bowl, add the leek, mushrooms and garlic and sauté for 3 min./120°C/speed 1.

Season and deglaze

Add salt, pepper, chili powder and vegetable broth powder and stir for 10 sec./speed 3. Then deglaze with plant-based cream and simmer for 2 min./90°C/speed 2.

Add tortellini, green beans and broccoli

Add the tortellini, green beans and broccoli florets to the mixing bowl and stir in for 1 min./50°C/Reverse speed 1.

Thicken (optional)

If necessary, mix some cornstarch with cold water and add to the mixing bowl. Simmer for 30 sec./90°C/speed 2 until the sauce has reached the desired consistency.

Stir in cherry tomatoes

Add halved cocktail tomatoes to the mixing bowl and stir in for 10 sec./50°C/Reverse speed 1.

Season with salt and pepper and serve sprinkled with freshly grated Parmesan.
