Description

Homemade Easter dove is a true delight, a symbol of Easter that smells of tradition and celebration. Preparing it requires a little patience, especially for the rising times, but the result is priceless: a soft, fragrant dove with a unique flavor. I prepare it every year, following the family recipe, and I must say it is always a success! The aroma of orange and vanilla makes it irresistible, perfect to enjoy for breakfast or as a dessert after Easter lunch. A tip? Prepare the aromatic paste in advance, so the flavors will blend perfectly.

  • Soft butter
  • Egg yolk

  • Grated orange zest
  • Vanilla bean
  • Candied orange

First dough

Place the refreshed sourdough starter (at least 3 times), flour, sugar, water and egg yolks in the bowl. Knead for 3 Min./Knetstufe.

Adding the butter

Add the soft butter in pieces, a little at a time, and knead for 2 Min./Knetstufe.

First rising

Transfer the dough to a bowl covered with film and let it rise for 480 Min. (8 hours) at room temperature.

Preparation of the aromatic paste

In a bowl, mix the honey, grated orange zest and vanilla bean. Store in the refrigerator for 30 Min.

Second dough

Place the leavened dough, flour, sugar and egg yolks in the bowl. Knead for 3 Min./Knetstufe.

Adding the aromatic paste and butter

Add the aromatic paste and the soft butter in pieces, a little at a time. Knead for 2 Min./Knetstufe.

Adding the candied fruit

Add the candied oranges and knead for 1 Min./Stufe 2.

Forming the dove

Divide the dough into two equal parts and form two small loaves. Place them in the 750 gram dove mold. Cover with film and let rise for 120 Min. until it reaches one centimeter from the edge.

Preparation of the glaze

Place the egg whites, almond flour and powdered sugar in the bowl. Mix for 20 Sec./Stufe 3.

Glazing and decorating

Spread the glaze on the risen dove with the help of a pastry bag. Decorate with powdered sugar and almonds.

Baking in the oven

Bake the dove in a preheated oven at 180°C for 55 Min.

Cooling

Remove the dove from the oven and pierce it with skewers. Turn the Easter dove upside down so that it cools without releasing too much humidity.
