Description

This Chinese cabbage lentil composition is a quick and easy dish that is perfect for a vegan lunch or dinner. The Chinese cabbage is sautéed with peppers and onions and combined with red lentils to create a filling meal. The pumpkin seeds provide a crunchy bite, while the soy sauce and Sambal Oelek give the dish a spicy note. I love to garnish this dish with fresh herbs and serve it with rice or noodles. It's an absolute favorite recipe when you need something quick and still want to eat healthy!

Ingredients (14 ingredients)

  • 1 piece Chinese cabbage
  • 1 piece small Pepper
  • 1 piece Onion
  • 3 tbsp Oil
  • 1 tsp Vegetable broth (instant)
  • 100 g red Lentils
  • 1 tbsp Pumpkin seeds
  • 100 g Mung bean sprouts
  • 1 pinch dried Oregano
  • 1 pinch Salt
  • 1 pinch Pepper
  • 2 tbsp Soy sauce
  • 1 tsp Sambal Oelek
  • 1 pinch Herbs for garnish

Preparation (7 steps)

Prepare vegetables

Clean, wash, halve and cut the Chinese cabbage into coarse pieces. Clean, wash and cut the pepper into strips. Peel and dice the onion.

Sauté onion and pepper

Put 3-4 tbsp oil into the mixing bowl. Add diced onion and pepper strips and sauté for 3 min./120°C/speed 1.

Roast 1-2 tbsp pumpkin seeds in a pan without adding fat until fragrant. Sort and wash mung bean sprouts.

About this recipe

The Chinese cabbage lentil composition is a dish that has established itself in my kitchen because it is so uncomplicated and versatile. I originally developed it as a quick solution on stressful days when I needed something healthy and filling without spending hours in the kitchen. The inspiration came from various Asian influences, and I tried to adapt the flavors to suit my family's taste. The Chinese cabbage forms the basis of the dish. It is milder than white cabbage and has a pleasant, slightly sweet note. The pepper, ideally a red one, brings color and an additional sweetness into play. The onion provides the savory base, which is further enhanced by sautéing it in oil. The red lentils are not only an excellent source of protein, but they also break down easily during cooking and bind the sauce, giving the dish a pleasant consistency. The pumpkin seeds are my personal highlight: they provide a great crunch and a nutty flavor that harmonizes wonderfully with the other ingredients. The mung bean sprouts bring a fresh, crunchy component and are rich in vitamins. When preparing it in the Thermomix®, it is important to keep an eye on the temperature and cooking time. Sautéing the onion and pepper at 120°C ensures that they become soft without burning. When sautéing the Chinese cabbage, the reverse setting is important so that the leaves are not chopped up. After adding the lentils, make sure there is enough liquid so that they don't burn. If necessary, simply add some more water. Seasoning with soy sauce and Sambal Oelek is a matter of taste. You can vary it according to your preference. If you don't like it too spicy, you can reduce the Sambal Oelek or leave it out altogether. This dish can be varied wonderfully. For a vegetarian version, you can replace the soy sauce with Tamari. If you like it a little more hearty, you can add smoked tofu or Tempeh. Other vegetables such as carrots, broccoli or sugar snap peas also go well with it. There are no limits to your imagination when it comes to spices. Ginger, garlic, curry powder or chili flakes give the dish a different flavor. The Chinese cabbage lentil composition is best served warm, garnished with fresh herbs such as coriander, parsley or chives. Rice, noodles or just a piece of bread go well with it. If you like, you can add a dollop of yogurt or a spoonful of peanut butter. Leftovers of the Chinese cabbage lentil composition can easily be stored in the refrigerator. They will keep for 2-3 days. To reheat, you can either heat them in the microwave or in a pot on the stove. The dish is also good for preparation. You can prepare it the day before and then heat it up shortly before serving. This way you have a quick, healthy and delicious meal on the table even on stressful days.
