Description

This sweet potato lentil curry is a vegan and vegetarian dish that can be prepared quickly and easily in the Thermomix®. It is rich in fiber and protein and is ideal as a warm, hearty main course. The preparation time is 45 minutes and yields 3 servings. Ideal for pre-cooking and reheating.

Ingredients (13 ingredients)

  • 450 g Sweet Potato(es)
  • 1 große Bell pepper(s), red
  • 2 Clove(s) of garlic
  • 2 m.-große Onion(s)
  • 1 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 2 tsp Curry powder
  • 2 tsp Turmeric powder
  • 1 tsp Garam Masala
  • Salt and Pepper
  • 200 g Lentils, red
  • 500 ml Coconut milk
  • 250 ml Vegetable broth

Preparation (8 steps)

Prepare Sweet Potato, Pepper, Garlic and Onion

Peel 450 g sweet potatoes and cut into cubes. Dice 1 large red bell pepper as well. Peel 2 cloves of garlic. Quarter 2 medium-sized onions.

Chop Onions

Put the quartered onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Sauté Onions

Add 1 tbsp olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add Garlic

Thermomix® Setting

Put the peeled garlic in the mixing bowl and chop for 3 sec./speed 7. If necessary, use the spatula to push down from the edge.

Add Sweet Potatoes and Peppers

Put the diced sweet potatoes and peppers in the mixing bowl.

Add Tomato Paste and Spices

Add Lentils, Coconut Milk and Vegetable Broth

Add 200 g red lentils, 500 ml coconut milk and 250 ml vegetable broth to the mixing bowl.

For me, this sweet potato lentil curry is a dish that radiates warmth and security. Inspired by Indian cuisine, I have adapted it over the years until it became the simple but incredibly satisfying dish it is today. The sweet potato brings a natural sweetness and creaminess that harmonizes perfectly with the earthy lentils and aromatic spices. The list of ingredients may seem long at first glance, but each component plays an important role. The sweet potato, cut into cubes, provides a pleasant texture and a subtle sweetness that balances the curry. The red pepper contributes a slight bitterness and crunchy consistency. Garlic and onion form the aromatic base, while tomato paste provides a deep, umami-rich note. The spices – curry powder, turmeric and Garam Masala – are the heart of the curry and give it its characteristic taste. Red lentils are ideal because they cook quickly and create a creamy consistency. Coconut milk provides creaminess and a light sweetness, while vegetable broth provides the necessary liquid to bind everything together. When preparing in the Thermomix®, it is important not to chop the onions too finely, as they may burn. Sautéing the onions and spices is crucial to release the aromas. Make sure to cut the sweet potatoes and peppers into roughly the same size cubes so that they cook evenly. While simmering, it is advisable to use the spatula to stir the curry occasionally, especially at the bottom of the mixing bowl, to prevent burning. This curry is extremely versatile. For an even creamier version, you can add a little more coconut milk. If you like it spicier, you can add a pinch of chili powder or a chopped chili pepper. Instead of red lentils, brown or green lentils can also be used, which will lengthen the cooking time accordingly. If you don't like it vegan, you can add a dollop of yogurt or sour cream before serving. The best way to serve the sweet potato lentil curry is with rice, naan bread or quinoa. A fresh coriander or parsley salad goes perfectly with it. A dollop of yogurt or a squeeze of lime juice round off the dish. The curry is excellent for preparing and reheating. It can be kept in the refrigerator for up to three days. In fact, it often tastes even better the next day, as the flavors have then fully developed. It is also good for freezing. So you always have a healthy and tasty meal at hand.
