Description

This apple sauce with caramel note, prepared in the Thermomix®, is a simple and inexpensive dessert or breakfast. The main ingredients are apples, brown sugar, apple juice and butter, refined with cinnamon. In just 35 minutes, 6 servings of a vegetarian dessert are created. Ideal for light cuisine, as an autumnal treat or for the whole family.

Ingredients (6 ingredients)

  • 1000 g Apples (sour varieties)
  • 2 EL brown sugar
  • 125 ml Apple juice (100% direct juice)
  • 20 g Butter
  • 0.5 TL Lemon juice
  • 0.5 TL Cinnamon

Preparation (5 steps)

Prepare apples

Peel, core and cut 1 kg of apples into approximately 3 cm pieces. Place the apple pieces in a bowl and mix with 0.5 tsp cinnamon and 0.5 tsp lemon juice. Set the prepared apples aside.

Caramelize sugar

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 2 tbsp brown sugar and 20 g butter into the mixing bowl and melt for 3 min./120°C/speed 1 without the measuring cup. Use the spatula to run along the bottom to prevent burning. The sugar should caramelize and take on a golden brown color.

Add and sauté apples

20 min/212°F/Linkslauf Speed 1 100 Reverse

Put the prepared apple pieces into the mixing bowl and add 125 ml apple juice. Simmer for 20 min./100°C/reverse rotation speed 1 without the measuring cup. The reverse rotation prevents the apple pieces from being chopped too finely.

Puree apple sauce

Thermomix® Setting
30 sec/Speed 8-10

After the time has elapsed, open the mixing bowl and puree the apple sauce for 30 sec./speed 8-10 until the desired consistency is reached. If necessary, push down with the spatula and repeat the process.

Season and bottle

Taste the apple sauce and season with more lemon juice, cinnamon or sugar if necessary. Fill the finished apple sauce into sterilized jars and seal immediately. Turn the jars upside down and let them cool.
