Description

This oranges and lemons jam is a real concentrate of winter flavors! I often prepare it when I want a genuine and fragrant breakfast. The secret lies in blanching the peels to eliminate the bitterness and using organic fruit for a more intense taste. The preparation is simple and quick thanks to our trusted Thermomix®. Perfect to spread on toast or to fill pies and biscuits. An explosion of citrus fruits that awakens the senses!

  • Lemons
  • Sugar

Preparation (7 steps)

Sterilization of the jars

Put the jars in a pot, wrapped in a clean cloth, cover with water and bring to a boil. Let it boil for 15 minutes. Extract the caps and jars from the water and let them cool on a clean cloth until ready to use. This step is not performed with the Thermomix.

Preparation of the citrus fruits

Wash the oranges and lemons thoroughly. Peel the citrus fruits with a potato peeler, being careful not to take the more bitter white part. Cut the peels into strips and set aside. Remove the white part from the citrus fruits and cut the fruit into pieces, inspecting the pulp to remove all the seeds. This step is not performed with the Thermomix.

Blanching the peels

Blanch the peels in a pot, 2 minutes for 3 times, changing the water each time. This step is used to eliminate any bitter aftertaste from the peels. This step is not performed with the Thermomix.

Initial cooking

Put the blanched peels, the citrus pulp and the sugar in the Thermomix bowl. Cook for 30 minutes/100°C/speed 2.

Consistency check

Do the saucer test: take a spoonful of jam, pour it on a saucer and wait for it to cool. If the jam does not drip when the plate is tilted, it means it is ready. Otherwise, extend the cooking for 5 minutes/100°C/speed 2 and do the test again.

Extending cooking (if necessary)

If the jam is not yet of the right consistency, cook for another 5 minutes/100°C/speed 2.

Bottling

Pour the ready jam, still hot, into the sterilized jars, leaving 2 cm from the edge. Close the jars and let them cool completely at room temperature. Before storing in the pantry, make sure that the jam is vacuum-packed: if pressing the cap in the center does not hear any noise, it means that the vacuum has been done correctly. This step is not performed with the Thermomix.
