Description

This apricot jam with passion fruit is a fruity and exotic delight for every breakfast table! I make it every year when the apricots are ripe. The combination of sweet apricots and tart passion fruit nectar is simply unbeatable. The jam tastes great not only on bread, but also with yogurt or quark. It is easy to prepare and keeps well sealed for several months. A great recipe to capture the summer in a jar!

Ingredients (6 ingredients)

  • 6 piece Jars (à 250 ml)
  • 700 g Apricots
  • 2 tsp Vanilla extract
  • 250 g Gelling sugar (3 : 1)
  • 250 ml Passion fruit nectar
  • 1 piece Lime (juice of)

Preparation (6 steps)

Prepare apricots

Wash, pit and weigh out 500 g of apricot pulp. Put the pulp into the mixing bowl.

Let the apricot mixture rest

Thermomix® Setting
30 sec/Speed 3

Add vanilla extract and gelling sugar to the apricots in the mixing bowl and mix for 30 sec./speed 3. Then let it rest for 30 minutes.

Add passion fruit nectar and lime juice

Thermomix® Setting
10 sec/Speed 3

Add passion fruit nectar and lime juice to the apricot mixture in the mixing bowl and mix for 10 sec./speed 3.

Cook jam

Thermomix® Setting
15 min/212°F/Speed 2 100

Cook the mixture for 15 min./100°C/speed 2, stirring constantly. Use a spatula to scrape the mixture from the edge if necessary.

Perform setting test

Perform a setting test. To do this, place a teaspoon of the hot jam on a cold plate. If the jam sets, it is ready. If not, cook for another 2 min./100°C/speed 2 and do another setting test.

Fill jam

Skim off any foam from the jam and pour immediately into prepared twist-off jars. Close the jars immediately and turn them upside down. Let cool.
