Description

This hearty noodle ground meat cheese pan is absolute soul food! I love making it when I need something quick and I'm really hungry. The dish is wonderfully hearty and the combination of ground meat, kidney beans, corn, and of course lots of cheese is simply unbeatable. The preparation is very simple and the result tastes great to the whole family. Perfect for a cozy evening or as a quick lunch. If you like it a little spicier, you can add an extra pinch of chili powder. A real satiating dish!

Ingredients (18 ingredients)

  • 2 piece Onions
  • 1 clove Garlic
  • 1 piece red Chili pepper
  • 2 tbsp Oil
  • 250 g mixed Ground meat
  • 2 tbsp Tomato paste
  • 425 ml Kidney beans
  • 425 ml Corn
  • 2 can chunky Tomatoes
  • 900 ml Vegetable broth
  • Salt
  • Pepper
  • 1 tsp Sweet paprika
  • 1 tsp Chili powder
  • 500 g short Macaroni
  • 75 g grated Gouda
  • 75 g grated Cheddar
  • 0.5 bunch Parsley

Preparation (7 steps)

Prepare onions, garlic and chili

Peel and quarter 2 onions and 1 clove of garlic. Slit 1 red chili pepper lengthwise, core and halve. Put everything in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Fry ground meat

5 min/248°F/Speed 1 120

Add 2 tbsp oil and 250 g mixed ground meat and sauté for 5 min./120°C/level 1.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp tomato paste and sauté for 3 min./120°C/level 1.

Add beans, corn, tomatoes and broth

Drain and rinse 1 can (425 ml) of kidney beans and 1 can (425 ml) of corn. Add to the mixing bowl together with 2 cans of diced tomatoes and 900 ml of vegetable broth.

Season and cook noodles

10 min/212°F/Linkslauf Speed 1 100 Reverse

Season with salt, pepper, 1 tsp sweet paprika and 1 tsp chili powder. Add 500 g short macaroni and simmer for 10 min./100°C/reverse rotation level 1.

Add and melt cheese

Thermomix® Setting
1 min/140°F/Linkslauf Speed 1 60 Reverse

Add 75 g grated Gouda and mix in for 1 min./60°C/reverse rotation level 1. Sprinkle 75 g grated Cheddar on top and melt for 5 min./60°C/reverse rotation level 1.

Wash and chop ½ bunch of parsley and sprinkle on the cheese noodles before serving.
