Description

This hearty pork stew with sauerkraut and potatoes, prepared in the Thermomix®, warms you up on cold days. The main ingredients are pork shoulder, sauerkraut, potatoes, onions and spices. In 120 minutes, a hearty main course for 6 servings is created. Ideal as a family meal or for lovers of traditional home cooking.

  • 600 g Pork shoulder, diced
  • 4 Stück Onions
  • Oil for frying
  • 1 Zehe Garlic
  • 0.5 TL Caraway
  • 1 EL Paprika powder, hot
  • 1 Stück Organic lemon zest
  • 2 Zweig Parsley
  • Salt
  • Pepper
  • 0.5 Liter Broth
  • 200 g Sour cream or crème fraîche
  • 350 g Sauerkraut, ready to cook
  • 600 g Potatoes

Preparation (8 steps)

Prepare meat

Fry the diced pork (600g) in portions in a pan with oil and then set aside.

Chop onions

Peel the onions (4 pieces), halve them and put them in the mixing bowl. Chop for 3 sec./level 5.

Sauté onions

Add oil for frying to the mixing bowl and sauté the chopped onions for 3 min./120°C/level 1.

Add meat and spices

Add the fried meat back to the onions in the mixing bowl. Roughly crush caraway (0.5 tsp) in a mortar, press garlic (1 clove) and add to the mixing bowl together with the caraway, paprika powder (1 tbsp, hot), lemon zest (1 piece, organic, chopped), salt and pepper. Briefly heat for 1 min./100°C/level 1.

Simmer with broth

Pour the broth (0.5 liters) into the mixing bowl and simmer covered for 30 min./100°C/level 1/reverse rotation.

Add sauerkraut and simmer

Add the sauerkraut (350g, ready to cook) to the mixing bowl and simmer uncovered for another 30 min./100°C/level 1/reverse rotation. Test whether the meat is soft, otherwise let it steep a little longer.

Cook potatoes

Peel the potatoes (600g), cut into pieces and cook in a separate pot with salt water until they are done.

Refine and serve

1 min/194°F/Speed 1/Linkslauf 90 Reverse

Add sour cream (200g) or crème fraîche to the goulash in the mixing bowl and stir in for 1 min./90°C/level 1/reverse rotation. Season with salt and pepper. Pluck parsley (2 sprigs), chop finely and sprinkle over before serving. Serve together with the cooked potatoes.
