Description

These savory steak wraps are an absolute hit for any party or cozy dinner! The tender flank steak, combined with spicy rice, kidney beans, and corn, makes these wraps a taste experience. I like to make them when friends come to visit because they are easy to prepare and always go down well. The slight spiciness of the chili and the fresh lime give the dish that certain something. If you don't like it so spicy, you can of course leave out the chili. Also ideal for taking away!

Ingredients (14 ingredients)

  • 125 g brown Rice
  • 300 g Flank steak
  • 2 tbsp Salt
  • 1 can Kidney beans (255 g)
  • 1 can Corn (small)
  • 2 piece Shallots
  • 1 clove Garlic
  • 1 piece Chili
  • 1 tsp Pepper
  • 1 tbsp Balsamic vinegar
  • 50 ml Water
  • 1 piece Lime
  • 1 Bd. Coriander
  • 4 piece Tortilla Wraps

Preparation (6 steps)

Cook rice

Thermomix® Setting
25 min/212°F/Speed 4 100

Place 125 g brown rice in the simmering basket and fill with 500 ml water in the mixing bowl. Cook the rice according to package directions for 25 min./100°C/level 4. Remove simmering basket and set rice aside.

Chop shallots, garlic and chili

Thermomix® Setting
3 sec/Speed 5

Put 2 shallots, 1 large clove of garlic and 1 chili in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add some oil to the chopped ingredients in the mixing bowl and sauté for 3 min./120°C/level 1.

Add corn and beans

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Add 1 can of corn (small) and 1 can of kidney beans (255 g), drained, to the mixing bowl. Heat for 2 min./100°C/reverse rotation level 1.

1 min/212°F/Linkslauf Speed 1 100 Reverse

Add 1 tsp pepper, 2 tbsp salt, 1 tbsp balsamic vinegar and 50 ml water and simmer for 1 min./100°C/reverse rotation level 1.

Refine rice

Mix the cooked rice with the juice of 1 lime and 1 bunch of chopped coriander.
