Description

This recipe for confit goose legs is a feast for the senses! The legs are braised until tender and served with aromatic bell pepper tomato vegetables and homemade semolina dumplings. I especially like to make this dish in autumn and winter when it's cold outside. The preparation takes a while, but the result is worth every minute. A hearty and festive dish that is guaranteed to impress! The semolina dumplings are a great side dish and can be prepared very well.

Ingredients (14 ingredients)

  • 4 x Goose legs
  • 1 Becher Lard
  • 500 Gramm Cherry tomatoes
  • 500 Gramm Bell pepper
  • 2 Zehe Garlic
  • 1 x Onion
  • 300 Gramm Durum wheat semolina
  • 1 Bündel Chives
  • 1 Liter Milk
  • 20 Gramm Butter
  • 2 x Eggs
  • 1 x Salt
  • 1 x Pepper
  • 1 x Sugar

Preparation (9 steps)

Prepare goose legs

Season the goose legs with salt and a little sugar. Melt wild lard in a pot, add a few herbs such as sage, thyme, garlic, etc. if desired. Roast the legs all around on the grill, add to the lard and confit or braise with the lid closed and indirect heat at about 120 degrees Celsius. The meat should be completely covered with lard. Since the meat of older geese requires a longer cooking time, confit the legs for another hour if necessary.

Heat milk and butter

Add 1 liter milk and 20 grams butter to the mixing bowl and heat for 3 min./90°C/speed 1.

Prepare semolina porridge

Add salt and sprinkle 300 grams durum wheat semolina into the mixing bowl while stirring constantly for 5 min./90°C/speed 3 and allow to swell into a thick porridge.

Refine semolina porridge

Add chopped chives and 2 eggs and stir in for 20 sec./speed 3. Use the spatula to push down from the edge.

Shape and cook semolina dumplings

Form small dumplings with wet hands and let them simmer in a pot with lightly simmering salt water for about 10 minutes until cooked through. Then roast in a pan in a little butter.

Chop onions

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add some clarified butter and sauté for 3 min./120°C/speed 1.

Add 2 cloves of garlic and chop for 3 sec./speed 7.

Add vegetables and reduce

Add 500 grams of halved cherry tomatoes, 500 grams of bell pepper cut into rings, a little sugar, salt, pepper and 200ml of water and reduce for 15 min./100°C/speed 1.
