Ingredients (14 ingredients)

  • 4 Stück Pork schnitzel (150 g each)
  • 3 EL Flour
  • 2 Stück Eggs
  • 100 g Breadcrumbs
  • Clarified butter
  • 400 g Mushrooms
  • 1 Stück Onion
  • 50 g Butter
  • 2 EL Tomato paste
  • 25 g Flour
  • 300 ml Beef broth
  • 200 g Cream
  • Salt
  • Pepper

Preparation (6 steps)

Chop mushrooms and onions

Slice 400g mushrooms. Add 1 onion to the mixing bowl and chop for 3 sec./speed 5.

Sauté mushrooms and onions

Thermomix® Setting
3 min/248°F/Speed 1 + 5 min/248°F/Speed 1 248°F

Add 50g butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1. Add the sliced mushrooms and sauté for another 5 min./120°C//speed 1.

Prepare the sauce

Thermomix® Setting
1 min/248°F/Speed 1 + 1 min/248°F/Speed 1 + 10 min/194°F/Speed 2 194°F

Add 2 tbsp tomato paste and sauté for 1 min./120°C/speed 1. Add 25g flour and stir in for 1 min./120°C/speed 1. Add 300ml beef broth and 200g cream and simmer for 10 min./90°C/speed 2. Season with salt and pepper.

Prepare schnitzel

Pound 4 pork schnitzel flat and season with salt and pepper. Place flour, 2 beaten eggs, and 100g breadcrumbs on separate plates. First, dredge the schnitzel in flour, then dip in the eggs, and finally coat in breadcrumbs.

Fry schnitzel

Heat clarified butter in a pan and fry the schnitzel for 2-3 minutes per side until golden brown.

Serve

Serve breaded schnitzel with the mushroom sauce.
