Description

This chicken couscous is a rich and flavorful dish, perfect for a family dinner or a party with friends. The preparation takes a little time, but the result is an explosion of flavors that will win everyone over. The chicken, tender and juicy, goes perfectly with seasonal vegetables and aromatic spices. A touch of harissa adds a spicy note that enhances the overall taste. I often prepare it in autumn, when the vegetables are at their best. Try it, you won't regret it!

  • Onions
  • Potatoes
  • Carrots
  • Chickpeas
  • Cabbage
  • Pumpkin
  • Zucchinis
  • Tomato paste
  • Hot red pepper
  • Tebel
  • Harissa Sauce
  • Extra virgin olive oil (EVO)
  • Sweet green pepper

Preparation (13 steps)

Preparation of the onions

Thermomix® Setting

Slice the onions and insert them into the bowl. Chop 3 Sec./Level 5. Transfer the chopped onions to a bowl and set aside.

Sauté the onions

Pour the extra virgin olive oil into the bowl and add the chopped onions. Sauté 5 Min./120°C/Level 1.

Brown the chicken

In a pan, brown the chicken pieces evenly for about 10 minutes.

Adding the tomato paste

Add the tomato paste to the bowl and cook 2 Min./120°C/Level 1.

Flavor with the spices

Add the spices (tebel, hot red pepper) and 250 ml of water to the bowl. Cook 10 Min./100°C/Level 1.

Adding carrots and chickpeas

Thermomix® Setting
15 min/212°F/Speed 1 100

Add the chopped carrots and chickpeas to the bowl. Add another 250 ml of water. Cook 15 Min./100°C/Level 1.

Adding the vegetables

20 min/212°F/Speed 1 100

Add the chopped potatoes, pumpkin, zucchinis and cabbage to the bowl. Add 500 ml of water and salt. Cook 20 Min./100°C/Level 1.

Preparation of the couscous

In a bowl, work the semolina for the couscous with a spoonful of oil, a teaspoon of salt and 60 ml of cold water.

Cooking the couscous (first phase)

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Transfer the worked semolina to the Varoma container. Pour more water into the bowl (about 500 ml) and place the Varoma on top of the bowl. Cook 20 Min./Varoma/Level 1.

Working the couscous (second phase)

Remove the couscous from the Varoma, transfer it to a bowl and rework it with your hands, adding another 60 ml of cold water.

Cooking the couscous (second phase)

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Put the semolina back in the Varoma and cook 20 Min./Varoma/Level 1.

Couscous seasoning

At the end of the chicken cooking, complete the couscous seasoning by placing the chicken pieces and cooked vegetables on the semolina.

Decoration

Decorate everything with some fried sweet green peppers.
