Description

This Moroccan-inspired chicken and date couscous is a flavorful and satisfying dish that's perfect for a weeknight dinner or a casual gathering. The sweetness of the dates complements the savory chicken and spices beautifully, while the almonds add a delightful crunch. I've been making this recipe for years, and it's always a hit! It's also great for meal prepping, as it reheats well. Feel free to add other vegetables like carrots or zucchini for extra nutrients. The warm spices make it especially comforting in the autumn months.

Ingredients (10 ingredients)

  • 2 tbsp olive oil
  • 500 g skinless chicken thigh
  • 140 g wholewheat couscous
  • 2 piece onions
  • 4 clove garlic cloves
  • 350 ml chicken stock
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 6 piece large dates
  • 50 g flaked almond

Prepare Chicken and Couscous

Preheat oven to 180°C. Heat 1 tbsp olive oil in a large frying pan over high heat. Season the 500g skinless chicken thighs, then cook for 10 mins or until browned on both sides. Remove and put in a large baking dish with the 140g wholewheat couscous.

Chop Onions and Garlic

Place 2 onions into the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté Onions and Garlic

Add the remaining 1 tbsp olive oil and 4 garlic cloves to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Add Stock and Spices

5 min/212°F/Speed 1 100

Add 350ml chicken stock, 1 tsp ground cumin, 1 tsp ground cinnamon, and 6 large dates to the mixing bowl. Cook for 5 Min./100°C/Stufe 1.

Combine and Bake

Pour the date mixture over the chicken and couscous, sprinkle over the 50g flaked almonds, cover with foil and bake for 20 mins.
