Description

This honey ice cream with fruit mirror is an absolute delight! I especially like to make it in the summer when fresh fruits are in season. The ice cream itself is creamy and gets a fine sweetness from the honey. The fruit mirror made from pureed berries or kiwi provides a fruity note and makes the dessert a real eye-catcher. A shot of Amaretto and fruit brandy in the fruit puree rounds the whole thing off perfectly. Ideal for birthdays or just because you want to treat yourself to something special. Can be prepared well in advance and stored in the freezer.

Ingredients (9 ingredients)

  • 2 piece Egg yolk
  • 1 tbsp Vanilla sugar
  • 250 ml Cream
  • 125 ml Milk
  • 150 g Honey
  • 500 g Fruits
  • 2 tbsp Brandy
  • 2 tbsp Amaretto

Beat eggs, egg yolks and sugar

Add 2 eggs, 2 egg yolks and 1 tbsp vanilla sugar to the mixing bowl and beat for 3 min./speed 4 until the mixture is very foamy.

Heat cream and milk

Add 250 ml cream and 125 ml milk to the mixing bowl and heat for 5 min./90°C/speed 2.

Mix egg mixture and cream-milk mixture

Thermomix® Setting
1 min/Speed 3

Slowly and evenly pour the heated cream-milk mixture into the egg mixture in the mixing bowl and stir for 1 min./speed 3. Add 150 g honey and stir for another 30 sec./speed 3 until the honey has dissolved.

Cool and freeze ice cream mixture

Pour the mixture into a bowl and let it cool, stirring frequently. Then freeze in an ice cream maker according to the manufacturer's instructions. Alternatively, fill into an aluminum bowl and place it in the freezer, stirring vigorously every half hour.

Prepare fruit puree

30 sec/Speed 8

Put 500 g of fruits (e.g. raspberries, strawberries, kiwi) in the mixing bowl and puree for 30 sec./speed 8. If necessary, pass through a sieve to remove seeds.

Flavor fruit puree

10 sec/Speed 2

Add 2 tbsp fruit brandy and 2 tbsp Amaretto to the fruit puree in the mixing bowl and stir for 10 sec./speed 2. Season with sugar to taste and stir for 10 sec./speed 2.

Serve scoops of honey ice cream on a fruit mirror. Decorate with some fresh fruits.
