Description

This creamy leek and cheese soup is an absolute comfort classic that warms you up, especially on cool days. I like to make it when I need something quick and still want something hearty on the table. The leek and bell pepper give the soup a nice spiciness, while the cream cheese and yogurt provide a wonderfully creamy consistency. Perfect as a main course or as a warming appetizer. And the best thing: it is lactose-free and therefore also suitable for sensitive gourmets! A dash of fresh herbs rounds off the dish.

Ingredients (8 ingredients)

  • 2 Stange Leek
  • 1 piece Onion
  • 500 ml Vegetable broth
  • 1 piece red Bell pepper
  • 100 g lactose-free Yogurt
  • 175 g lactose-free Cream cheese
  • to taste Salt
  • to taste Pepper

Preparation (5 steps)

Prepare leek and onion

Thermomix® Setting

Clean the leek, wash thoroughly and cut into rings. Peel and quarter the onion. Place onion in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté the onion

Add some oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add leek and broth

Thermomix® Setting
15 min/212°F/Speed 1 100

Add the chopped leek to the onions in the mixing bowl. Add vegetable broth and simmer for 15 min./100°C/speed 1.

Refine soup

Thermomix® Setting
30 sec/Speed 3

Add yogurt and cream cheese to the mixing bowl and stir for 30 sec./speed 3. Clean, wash and finely dice the bell pepper.

Season and serve

Season the soup with salt and pepper. Fill into bowls and sprinkle with diced bell pepper.
