Description

This creamy onion soup is a true comfort food, especially on cold days. I like to make it when I need something quick, because it's ready in just 20 minutes. The sweetness of the onions harmonizes wonderfully with the cream and fresh herbs. A splash of white wine provides a fine acidity. If you like, you can serve the soup with roasted bread cubes or a dollop of crème fraîche. It is vegetarian and can be prepared well in advance. An absolute favorite recipe for the whole family!

Ingredients (11 ingredients)

  • 2 tbsp Butter
  • 500 g Onions
  • 2 tbsp Flour
  • 1 Glas White wine
  • 500 ml Vegetable broth
  • 1 container Cream
  • 1 pinch Salt
  • 1 pinch Pepper from the mill
  • 1 pinch Sugar
  • Oregano
  • Basil

Preparation (5 steps)

Prepare onions

Thermomix® Setting
3 sec/Speed 5

Peel and halve 500 g of onions. Place the halved onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Sauté onions

3 min/248°F/Speed 1 120

Add 2 tbsp butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook soup

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 2 tbsp flour to the onions and sauté for 1 min./100°C/speed 1. Add 1 glass of white wine and 500 ml of vegetable broth and simmer for 15 min./100°C/speed 1.

Refine soup

Thermomix® Setting
2 min/194°F/Speed 1 90

Add 1 carton of cream, 1 pinch of salt, 1 pinch of pepper and 1 pinch of sugar and stir in for 2 min./90°C/speed 1.

Add herbs

Wash, finely chop and stir the oregano and basil into the soup. Serve the soup immediately.
