Description

This creamy Parmesan risotto is a real treat for cheese lovers! The secret lies in the two different textures of the Parmesan: once creamy in the risotto itself and once crispy as a topping. I like to make this recipe when I want to cook something special without spending hours in the kitchen. It is easy to prepare and tastes simply delicious. Perfect for a cozy evening with friends or as a festive dish for special occasions. Preparation takes only about 35 minutes, and the result is a risotto that melts in your mouth. An absolute must for anyone who loves Italian cuisine!

Ingredients (7 ingredients)

  • 320 g Rice
  • 0.5 piece Onions
  • 200 g Parmigiano Reggiano
  • 140 g Butter
  • 700 ml Vegetable broth
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation (7 steps)

Chop onion

Place half an onion in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion

Add 20 g butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add rice and roast

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 320 g rice to the mixing bowl and roast for 3 min./100°C/speed 1 without measuring cup.

Cook risotto

Thermomix® Setting
20 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add 700 ml vegetable broth, salt and pepper to taste to the mixing bowl and cook for 20 min./100°C/gentle stirring/reverse without measuring cup. Note the cooking time of the rice and extend if necessary.

Prepare Parmesan cialda

Spread 100 g grated Parmesan on a plate lined with baking paper and melt in the microwave at maximum power for about 30 seconds until a crispy cialda is formed. Let cool.

Refine risotto

Thermomix® Setting
1 min/140°F/Gentle stir speed/Linkslauf 60 Reverse

Add 20 g butter and 100 g grated Parmesan to the risotto in the mixing bowl and stir for 1 min./60°C/gentle stirring/reverse.

Arrange

Arrange the risotto on plates, sprinkle with freshly ground pepper and decorate with the Parmesan cialda.
